1. Miso Fried Udon Noodles with Ground Meat Recipe
Ingredients (for 1 serving)
・7.8 oz (220g) Udon noodles
・2.8 oz (80g) Ground pork
・2.8 oz (80g) Bok choy
・2 tsp Minced ginger
・1 tsp Minced garlic
・2 tsp Oil
Sauce1
・1 tsp Sake
・1 tsp Soy sauce
・1 tsp Miso paste
Sauce2
・1/2 tbsp Sugar
・1 tsp Miso paste
・1/2 tsp Chicken stock powder
Topping
・Soft-boiled egg or Fried egg
Direction
1. Oil pan. Put minced ginger, garlic, and sesame oil. Heat a little, and add ground pork.
2. Season pork with sauce1. When pork absorb the taste, add bok choy. Stir-fry on low heat.
3. Boil udon noodles in boiling water for 30 seconds to 1 minute until loosened.
4. Drain hot water from udon, and add udon to pan. Add sauce2, and stir to combine.
5. Put boiled egg or fried egg as topping.
Ready to eat!
2. Yakitori-style Fried Udon Noodles Recipe
Ingredients (for 1 serving)
・7.8 oz (220g) Udon noodles
・2.8 oz (80g) Chicken
・2.8 oz (80g) Chinese cabbage
・1 oz (30g) Carrot
・Salt and pepper
Sauce★
・1 tbsp Soy sauce
・1 tbsp Mirin
・1/2 tbsp Sake
・1/2 tbsp Sugar
・1/2 tbsp Sesame oil
Topping
・Minced green onion
Direction
1. Cut chicken into bite-sized, and sprinkle salt and pepper. Fry chicken skin side down for 2-3 minutes until browned.
2. Add carrot and Chinese cabbage, and stir-fry until soft.
3. Boil udon noodles in boiling water for 30 seconds to 1 minute until loosened.
4. Drain hot water from udon, and add udon to pan. Add sauce★, and stir to combine.
5. Put minced green onion as you like.
Ready to eat!
3. Traditional Japanese Udon Noodles (Tempura Udon) Recipe
Ingredients (for 1 serving)
・7.8 oz (220g) Udon noodles
・1.7 oz (50g) Prawn
・1 tsp Flour
・Oil for deep-frying
Tempura batter
・1.4 oz (40g) Flour
・2 tbsp Cold water
・1 tsp Beaten egg
Soup for udon
・1 cup (250ml) Water
・1 tbsp Soy sauce
・1 tsp Sake
・1 tsp Mirin
・1 tsp Dashi granules (Hondashi)
Topping
・Kamaboko (Boiled fish paste)
・Minced green onion
・Wakame seaweed
Direction
1. Prepare toppings as you like.
2. Cut slit in belly of prepped prawn and straighten it.
3. Coat prawn with flour. Make batter with flour, cold water, and beaten egg.
4. Dip prawn in batter, and deep-fry in oil.
5. Put seasonings for udon soup in pot. When it boils, add udon noodles. Cook for 2-3 minutes. Dish up in bowl. Put toppings and prawn tempura.
