4 EASY Chashu Pork & Chicken – How to Make Japanese Chashu

1. Most Delicious Chashu Pork Recipe

Ingredients (for 2 servings)

・10 oz (280g) Pork boston butt or Pork belly
・2 tbsp Soy sauce
・1 tbsp Honey
・1 tbsp Mirin
・2 tsp Oyster sauce
・2 tsp Sake
・2 tsp Sesame oil
・1 tsp Sugar
・1-2 tsp Grated ginger
・1/2 tsp Grated garlic

・3 tbsp Sake

Direction

1. Use fork to pierce entire piece of pork in order to make it easier for flavor to soak in.

2. Put pork in plastic bag, and add soy sauce, honey, mirin, oyster sauce, sake, sesame oil, sugar, grated ginger, and grated garlic. Rub top of bag to mix them together.

Place in refrigerator for 30 minutes. If left for more than 1 hour, it tastes even better with more flavor.

3. Remove pork from bag and pan fry. (No need for oil.)

4. Fry pork until browned all over surface. Wipe scorch marks on pan with paper towel.

5. Add 2 tbsp sake. Cover and fry over low heat for 10 minutes.

6. Turn pork over. Add 1 tbsp sake. Fry for another 10 minutes.

7. Put all sauce in bag in pan.

8. Cook over low heat for about 5 minutes while tossing in meat.

9. Slice it when slightly cooled, and dish up.

Dip it in sauce when eating.

Ready to eat!

2. Easiest Chicken Chashu Recipe

Ingredients (for 2 servings)

・10 oz (280g) Chicken breast
・0.4 cup (100ml) Water
・0.4 cup (100ml) Soy sauce
・0.4 cup (100ml) Mirin
・3 tbsp Sugar
・2 tsp Rice vinegar
・2 tsp Grated ginger
・Green part of green onion

Topping
・2 Boiled eggs

Direction

1. Prepare small pot. Put water, soy sauce, mirin, sugar, rice vinegar, grated ginger, and green onion.

2. Bring to a boil and add chicken. Cover and cook over low heat for 2 minutes.

3. Turn chicken over. Simmer for another 2 minutes.

4. Turn off heat. Leave it for 15 minutes and let chicken cook in residual heat.

5. Make soft boiled eggs, and put it in pot.

6. After 15 minutes, turn chicken over. Put soft boiled eggs in pot.

7. Leave it for another 15 minutes.

8. Slice chashu, and dish up.

Dip it in sauce when eating.

Ready to eat!

3. Miso Chashu Pork Recipe

Ingredients (for 2 servings)

・10 oz (280g) Pork boston butt or Pork belly
・0.3 cup (70ml) Sake
・1 tbsp Miso paste
・1 tbsp Mirin
・1 tbsp Soy sauce
・1 tbsp Sugar
・1 tsp Sesame oil
・1 tsp Grated garlic
・Ginger slices
・Green part of green onion

Direction

1. Fry pork until browned all over surface.

2. Wipe off oil and add green part of green onion and ginger. Pour sake.

3. Cover and cook over low heat for 7 minutes.

4. Turn pork over. Simmer for another 7 minutes.

5. Make miso sauce by mixing miso paste, mirin, soy sauce, sugar, sesame oil, and grated garlic.

6. Take out green onion and ginger. Pour miso sauce in pan. Pour sauce over pork while simmering miso sauce.

7. Slice it when slightly cooled, and dish up.

Dip it in sauce when eating.

Ready to eat!

4. Spicy Chicken Chashu Recipe

Ingredients (for 2 servings)

・10 oz (280g) Chicken thigh
・3 tbsp Mirin
・3 tbsp Sake
・3 tbsp Soy sauce
・1/2 tbsp Sugar
・1/2 tsp Grated garlic
・1/2 tsp Grated ginger
・Chili pepper (as much as you want)

Direction

1. Fry chicken, skin side down, uncovered for 7-8 minutes.

2. While frying prepare sauce by mixing mirin, sake, soy sauce, sugar, grated garlic, and grated ginger. Add sliced chili pepper as you like.

3. Put sauce in small pot. Bring to a boil and add chicken. Put chicken skin side up.

4. Simmer for 2 minutes, and turn off heat. Leave for 15 minutes and let chicken cook in residual heat.

5. Place chicken skin side down and let seasoning soak into this side. Leave for about10 minutes.

6. Slice chashu, and dish up.

Dip it in sauce when eating.

Ready to eat!
