1. Addicted Eggplant Slices
Ingredients (for 2-3 servings)
・7 oz (200g) Eggplant
・1-2 tbsp Oil
・3 tbsp Sake
・2 tbsp Soy sauce
・2 tbsp Mirin
・1 tbsp Sugar
・1 tbsp Sesame oil
・1 tsp Gochujang
・1/2 tsp Dashi granules (Hondashi)
・1/2 tsp Grated ginger
・1/2 tsp Grated garlic
Optional
・White sesame seeds
・Red pepper
Direction
1. Thinly slice eggplant.
2. Oil pan, and cook eggplant until soft.
3. Mix all of seasonings in pot. Bring to boil.
4. Transfer seasoning mixture to container. Soak fried eggplant in liquid.
Ready to eat!
It can be eaten immediately after cooking or left overnight to soak up the flavors.
It tastes best when eaten with rice, so if you put it in a lunch box, put the eggplant on top of the white rice.
2. Eggplant with Sweet Soy Sauce Chicken
Ingredients (for 1-2 servings)
・3.5 oz (100g) Eggplant
・2 oz (60g) Bell pepper
・Oil for frying
・3.5 oz (100g) Chicken
・1 tsp Sake
・1 tsp Soy sauce
・1/2 tsp Grated ginger
・1 tbsp Potato starch
・Oil for deep-frying
Sauce
・1 tbsp Sake
・1 tbsp Soy sauce
・1 tbsp Mirin
・1/2 tbsp Sugar
Direction
1. Cut eggplant and bell pepper into bite size. Fry them with oil.
2. Season chicken with grated ginger, sake, and soy sauce.
3. Coat chicken with potato starch, and deep-fry it in oil.
4. Mix sake, soy sauce, mirin, and sugar in pot. Bring to boil, and add fried vegetables and chicken to pot. Stir to combine.
Ready to eat!
3. Eggplant with Honey Mustard Chicken
Ingredients (for 1-2 servings)
・3.5 oz (100g) Eggplant
・1 tbsp Oil
・3.5 oz (100g) Chicken
・Salt and pepper
Sauce
・1/2 tbsp Grain mustard
・1 tsp Honey
・1 tsp Soy sauce
・1 tsp Mirin
・1/2 tsp Sugar
Direction
1. Cut eggplant into bite size. Fry it with oil.
2. Sprinkle salt and pepper on chicken, and fry it in pan.
3. Add fried eggplant to chicken, and pour seasoning mixture (honey mustard sauce).
4. Stir to combine.
Ready to eat!
4. Healthy Eggplant Pizza
Ingredients (for 1-2 servings)
・3.5 oz (100g) Eggplant
・1 oz (30g) Bacon
・1/2 tsp Oil
・1 tsp Miso paste
・1 tsp Mirin
・Shredded cheese
・Mayonnaise
Direction
1. Cut eggplant in half. Take out pulp.
2. Slice bacon, and stir-fry it with eggplant pulp. Season it with miso and mirin.
3. Put the mixture into eggplant bowl. Put cheese and mayonnaise as you like.
4. Bake the eggplant bowl until eggplant’s skin gets soft.
Ready to eat!
