1. Easy Okonomiyaki (Tompeiyaki) Recipe

Ingredients (for 2 servings)

・7 oz (200g) Cabbage
・2 oz (60g) Thinly sliced pork (pork belly or pork loin)
・Salt and pepper
・3 Eggs
・2 tbsp Milk
・1 tsp Sugar
・1 tsp Oil

Topping
・Okonomi sauce (Worcestershire sauce+Ketchup+Sugar=3:3:1)

Direction

1. Shred cabbage, and cut pork into bite-sized.

2. Stir-fry cabbage. When it gets soft, add pork. For pork belly, cook until oil part is crispy. Sprinkle salt and pepper. Stir to combine. Remove from pan once.

3. Mix egg with sugar and milk. Mix whites and yolks thoroughly.

4. Oil pan, and put all egg mixture into pan.

5.When eggs are slightly cooked, place cabbage and pork on eggs and roll up as if making an omelette.

6. Pour okonomi sauce and mayonnaise. Sprinkle bonito flakes and aonori as you like.

Ingredients (for 1-2 servings)

・2 Eggs
・6-8 tbsp Panko (Bread crumbs)
・Oil for deep-frying

Direction

1. Spread a 1-2 tbsp bread crumbs on a deep dish.

2. Crack an egg on top of it.

3. Sprinkle more bread crumbs to cover egg. Let sit for 10 minutes to blend bread crumbs into egg.

4. Deep-fry it for 2 minutes on each side, turning over halfway through. (Once in the oil, never touch it until it is time to turn it over.)

Ingredients (for 1 serving)

・6 oz (170g) Cooked rice
・2 Eggs
・1 oz (30g) Onion
・3.5 tbsp Water
・1 tbsp Mirin

・1 tbsp Sugar
・1/2 tsp Dashi granules (Hondashi)

Topping
・Green onion or Aonori (Dried green seaweed)

Direction

1. Shred onion. Put it in pan, and add water, mirin, sake, soy sauce, sugar, and dashi granules.

2. Simmer until the liquid is reduced by half.

3. Make beaten egg. Pour the white part first into pan. Cook for 1 minute.

4. Add rest of egg. Cook until yolks are the desired consistency.

5. Dish up rice in a bowl. Put egg and onion on top. Sprinkle minced green onion or aonori.

4. Thick Omelette Sandwich Recipe

Ingredients (for 1-2 servings)

・Your favorite bread
・1 tsp Mayonnaise
・1/2 tsp Japanese mustard (karashi)*
*Optional

・3 Eggs
・2 tbsp Water
・1/3 tsp Dashi granules (Hondashi)
・1/2 tsp Sugar
・A pinch of Salt
・1 tsp Oil

Direction

1. Make egg liquid by mixing egg, water, dashi granules, sugar, and salt.

2. Oil pan, and put all egg mixture into pan.

3. When eggs are slightly cooked, stir whole mixture with chopsticks to make it scrambled egg-like.

4. When about 80% of the whole egg is cooked, fold it in half using a spatula.

5. Cook each side for 1 minute on low heat, and turn off the heat.

6. Prepare sandwich bread and spread mayonnaise and Japanese mustard (optional).

7. Cut omelette so that it is same size as bread. Put omelette between bread, and cut into bite-size pieces.

Ingredients (for 2-3 servings)

・4 Eggs
・1 oz (30g) Green onion
・Half clove of Garlic
・1 Chili pepper
・4 tbsp Soy sauce
・3 tbsp Sugar

・2 tsp White sesame seeds
・0.4 cup (100ml) Water
・1/3 tsp Dashi granules (Hondashi)*

Direction

1. Cook egg in boiling water for 7 minutes. Transfer immediately to ice water and shell. (This method produces a semi-cooked egg.)

2. Make marinade sauce with grated garlic, soy sauce, sugar, sesame oil, water, sliced chili pepper, minced green onion, white sesame, and dashi granules.

3. Put boiled egg into the sauce. Store in refrigerator overnight.

Ingredients (for 1 serving)

・3.5 oz (100g) Cooked rice
・0.5 oz (15g) Bacon
・0.5 oz (15g) Onion
・1 tbsp Corn
・1.5-2 tbsp Ketchup
・1 tsp Butter
・Salt and pepper
・1/2 tsp Stock powder or cube

・1 Egg
・1/2 tsp Milk
・1/2 tsp Mayonnaise
・1/3 tsp Sugar
・2 tbsp Shredded cheese

Topping
・Ketchup
・Parsley

Direction

1. Mince bacon and onion. Add salt, pepper, and stock powder. Stir to combine. Cook them in microwave at 500W for 1 minute. 

2. Add corn and ketchup. Cook for 30 seconds in microwave.

3. Add butter, and stir to combine. Mix it with rice.

4. Put ketchup rice into mug. Sprinkle cheese. Pour egg liquid made with egg, milk, mayonnaise, and sugar.

5. Cook it in microwave again for 2.5-3 minutes until egg is cooked. Put more ketchup when serving.
