1. Yakitori (Skewered Chicken) Recipe
Ingredients (for 2 servings)
・10 oz (300g) Chicken thighs
・1.7 oz (50g) White part of green onion
・1/2 tsp Oil
Sauce
・1 tbsp Soy sauce
・1 tbsp Mirin
・1/2 tbsp Sake
・1/2 tbsp Sugar
Direction
1. Cut chicken and green onion into bite-sized. Mix seasonings for sauce.
2. Skewer chicken and green onion alternately.
3. Oil pan, and fry chicken on medium heat for 2-3 minutes.
4. Turn over when surface is browned. Cover and fry for 5 minutes.
5. Remove chicken from pan. Add sauce and bring to a simmer.
6. Return chicken and toss with sauce.
Ready to eat!
2. Chicken Spring Rolls Recipe
Ingredients (for 2 servings)
・5.3 oz (150g) Chicken tender
・1 tbsp Sake
・Salt and pepper
・5 sheets Spring roll wrappers
・5 Shiso leaves
・1.7 oz (50g) Shredded cheese
・Oil for deep-frying
Miso sauce version
・2 tsp Miso paste
・2 tsp Mayonnaise
・1 tsp Honey
Pickled plum version
・1 Pickled plum
・1/2 tsp Soy sauce
・1/2 tsp Sugar
・1/2 tsp Sesame oil
Direction
1. Remove tendon from chicken tender. Put chicken in heatproof bowl. Pour sake, and sprinkle salt and pepper.
2. Cook chicken in microwave at 500W for 2 minutes. Turn chicken over and cook 1 minute.
3. While chicken is cooling, make miso sauce with miso, mayonnaise, and honey. Remove seed from pickled plum and chop it finely.
4. When chicken is cool, tear it by hand. Dress 3/5 of chicken with miso sauce. Dress 2/5 of the chicken with soy sauce, sugar and sesame oil.
5. Roll up spring roll wrapper with shiso leaf, chicken and cheese (Put pickled plum in 2/5 chicken).
6. Deep-fry until surface is golden brown.
Ready to eat!
3. Chicken and Egg Bowl Recipe
Ingredients (for 1 serving)
・6 oz (170g) Cooked rice
・3.5 oz (100g) Chicken
・1.7 oz (50g) Onion
・2 Eggs
・3.5 tbsp Water
・1 tbsp Sake
・1 tbsp Soy sauce
・1 tbsp Sugar
・1 tbsp Mirin
・1/2 tsp Dashi granules (Hondashi)
Topping
・Minced green onion
Direction
1. Slice onion. Cut chicken into bite-sized.
2. Put water, sake, soy sauce, sugar, mirin, and dashi granules in pan. Simmer onion and chicken with it.
3. When chicken is cooked, add beaten egg (maybe it’s better to put the egg whites in first and cook). Then, add the rest of beaten egg. Cook until eggs are desired consistency.
4. Dish up rice in bowl, and put chicken and egg on top.
Ready to eat!
4. Miso Chicken Cutlet Recipe
Ingredients (for 1-2 servings)
・5.3 oz (150g) Chicken
・Salt and pepper
・Half beaten egg
・2 tbsp Flour
・4 tbsp Panko (Bread crumbs)
・Oil for deep-frying
Miso sauce
・2 tbsp Miso paste (Soybean miso is better)
・1 tbsp Water
・1 tbsp Mirin
・1 tbsp Sugar
・1 tbsp Ground sesame
Direction
1. Cut chicken into desired size.
2. Sprinkle salt and pepper on chicken, coat them with flour, and panko.
3. Deep-fry them in oil for 3 minutes on each side.
4. For miso sauce, mix water with mirin and sugar. Microwave it at 500W for 40 seconds. Then, add miso paste and ground sesame. Stir to combine.
Ready to eat!
5. Yodare-dori (Steamed Chicken with Spicy Sauce) Recipe
Ingredients (for 2 servings)
・8 oz (230g) Chicken breast
・1.25 cups (300ml) Water
・1 tbsp Sake
・1 tsp Sugar
・A pinch of Salt
・1 oz (30g) Green part of green onion
Sauce
・1 oz (30g) White part of green onion
・2 tbsp Soy sauce★
・2 tsp Sugar★
・2 tsp Rice vinegar★
・1 tsp Honey★
・1 tsp Sesame oil★
・1/2 tsp Miso paste★
・1/3 tsp Grated garlic★
・1/3 tsp Grated ginger★
Topping
・Minced green onion
・Chili oil
Direction
1. Put water, sake, sugar, and salt in pot. Add green part of green onion. Cook chicken breast in pot. When it boils, reduce heat to low and simmer for 3 minutes with lid on. Turn chicken over and cook for another 3 minutes. Turn off heat and let sit for 20 minutes.
2. Mince white part of green onion, and mix it with all of ★ seasonings.
3. Slice chicken, and pour sauce. Put chili oil as you like.
Ready to eat!
6. Fried Chicken with Nori Seaweed Recipe
Ingredients (for 1-2 servings)
・5.3 oz (150g) Chicken tender or breast
・Nori seaweed
・1 tbsp Potato starch
・1/2 tbsp Sake
・1/2 tbsp Soy sauce
・1/4 tbsp Sugar
・A pinch of Salt
・Oil for deep-frying
Direction
1. Cut chicken into sticks.
2. Soak chicken in marinade sauce made with sake, soy sauce, sugar, and salt.
3. Cut a small piece of nori and wrap it around the chicken.
4. Coat chicken with potato starch.
5. Deep-fry them in oil for 3 minutes on each side.
