6 Ways to Make Pork Miso Soup a.k.a. TONJIRU – Revealing Secret Recipes!

1. Standard Tonjiru (Authentic Pork Miso Soup)

Ingredients (for 2 servings)

・2 oz (60g) Thinly sliced pork (pork belly is better)
・2.5 oz (70g) Daikon
・1.7 oz (50g) Gobo (Burdock root)
・1 oz (30g) Carrot
・1 oz (30g) Green beans
・1 oz (30g) Onion
・1 tsp Sesame oil or Vegetable oil

・1.7 cups (400ml) Water
・1/2 tsp Dashi powder
・2 tbsp Miso paste

Topping
・Nanami togarashi (Japanese seven spice blend)

Direction

1.  Cut all the ingredients into small pieces.

2.  Stir-fry ingredients except green beans with sesame oil. When it’s slightly cooked, add water and dashi powder. Simmer for 5 minutes on low heat.

3.  Add green beans and simmer for 3 minutes.

4.  Turn off the heat, and dissolve miso paste.

2. Spicy Tonjiru (Spicy Pork Miso Soup)

Ingredients (for 2 servings)

・2 oz (60g) Thinly sliced pork (pork belly is better)
・1 oz (30g) Carrot
・1 oz (30g) Onion

・1.7 oz (50g) Bean sprouts
・0.5 oz (15g) Thin deep-fried tofu (Abura-age)
・1 Shiitake mushroom

・1 tsp Sesame oil or Vegetable oil☆
・1-2 tsp Minced garlic☆
・1-2 tsp Minced ginger☆
・2 tbsp Minced green onion☆
・2 tsp Doubanjiang

・1.25 cups (300ml) Water★
・0.4 cup (100ml) Tomato juice★
・2 tsp Sugar★
・1 tsp Sake★
・1 tsp Soy sauce★
・1/2 tsp Dashi powder★
・1 tbsp+1tsp Miso paste

Topping
・White radish sprouts

Direction

1.  Cut all the ingredients into small pieces.

2.  Warm ☆ in a pot. When the aroma starts to smell, add doubanjiang and pork. Stir-fry until pork is almost cooked.

3.  Add carrot and onion. Stir-fry for a while and add ★, bean sprouts, fried tofu, and shiitake mushroom. Simmer for 3-4 minutes.

4.  Turn off the heat, and dissolve miso paste.

3. Summer Veggie Tonjiru (Pork Miso Soup without Dashi)

Ingredients (for 2 servings)

・2 oz (60g) Thinly sliced pork (pork belly is better)
・A pinch of Garlic powder
・2.8 oz (80g) Eggplant
・2.5 oz (70g) Potato
・2 oz (60) Cherry tomatoes or Tomato
・1.4 oz (40g) Onion
・1 oz (30g) Okra
・1 tsp Olive oil or Vegetable oil or Sesame oil

・1.7 cups (400ml) Water
・1/2 tsp Consomme or Other type of stock powder
・2 tbsp Miso paste

Topping
・Parmesan cheese
・Parsley

Direction

1.  Sprinkle salt on okra in advance, wait 1 minute, and rinse in water. Cut all the ingredients into small pieces. 

2.  Stir-fry eggplant, onion, and potato with oil. When they are slightly cooked, add pork. When pork is almost cooked, add water and consomme. Simmer for 8 minutes on low heat.

3.  Add okra and simmer for 2 minutes.

4.  Turn off the heat. Add cherry tomatoes, and dissolve miso paste.

4. Zoni-style Tonjiru (Pork Miso Soup with Mochi)

Ingredients (for 2 servings)

・2 pieces of Mochi (Rice cake)
・2 oz (60g) Thinly sliced pork (pork belly is better)
・3.5 oz (100g) Daikon
・2.5 oz (70g) Gobo (Burdock root)
・1 oz (30g) Carrot
・1 tsp Sesame oil or Vegetable oil

・1.7 cups (400ml) Water
・1/2 tsp Dashi powder
・2 tsp Sake
・2 tbsp Miso paste

Topping
・Naruto (A boiled fish paste with a whirlpool-like pattern)
・Minced green onion

Direction

1.  Cut all the ingredients into small pieces. 

2.  Stir-fry daikon, gobo, and carrot with sesame oil. When they are slightly cooked, add pork. When pork is almost cooked, add water sake, and dashi powder. Simmer for 8 minutes on low heat.

3.  While simmering, bake mochi in a different pan.

4.  Turn off the heat. Dissolve miso paste. When the rice cakes are done, put them in a soup bowl and pour miso soup.

5. Creamy Tonjiru (Pork Miso Soup with Milk)

Ingredients (for 2 servings)

・2 oz (60g) Thinly sliced pork (pork belly is better)
・2.8 oz (80g) Potato
・2.5 oz (70g) Kabocha squash
・1 oz (30g) Carrot
・1 oz (30g) Onion
・1 Shiitake mushroom
・1 tsp Olive oil or Vegetable oil or Sesame oil

・0.8 cups (200ml) Water
・0.8 cups (200ml) Milk
・1/2 tsp Dashi powder
・2 tbsp Miso paste

Topping
・Minced green onion

Direction

1.  Cut all the ingredients into small pieces. 

2.  Stir-fry potato, kabocha, onion and carrot with oil. When they are slightly cooked, add pork. When pork is almost cooked, add water, shiitake mushroom, and dashi powder. Simmer for 6 minutes on low heat.

3.  Add milk and heat until just before boiling.

4.  Turn off the heat, and dissolve miso paste.

6. Mizore Tonjiru (Pork Miso Soup with Grated Daikon)

Ingredients (for 2 servings)

・2 oz (60g) Thinly sliced pork (pork belly is better)
・2.5 oz (70g) Konjac (Konnyaku)
・1.7 oz (50g) Lotus root
・1 oz (30g) Carrot

・1.7 cups (400ml) Water
・1/2 tsp Dashi powder
・2 tbsp Miso paste

Topping
・Grated daikon
・Lemon peel

Direction

1.  Cut all the ingredients into small pieces. Boil konjac for 2 minutes to remove its unique smell. (Discard the water in which konjac was boiled.)

2.  Cook lotus root and carrot in water. (Add dashi powder here.) Prepare grated daikon while simmering.

3.  Add konjac when vegetables are almost cooked. Bring to a boil again, and add pork.

4.  When pork is cooked, turn off the heat, and dissolve miso paste.
