1. Mapo Tofu (Beancurd Sichuan Style) Recipe
Ingredients (for 2 servings)
・11 oz (320g) Tofu
・3.5 oz (100g) Ground meat (pork, chicken, or beef)
・1oz (30g) Minced green onion (white part is better)
・1-2 tsp Minced garlic
・1-2 tsp Minced ginger
・1-2 tsp Oil
・0.8 cup (200ml) Water
・2 tsp Potato starch or Corn starch
・4 tsp Water
Sauce★
・1 tbsp Doubanjiang (Chinese broad bean chili paste)*
・1 tbsp Sake
・1 tbsp Sugar
・2 tsp Miso paste
・2 tsp Soy sauce
・1 tsp Chicken stock powder or Other type of stock powder (cube)
・1 tsp Oyster sauce
*Doubanjiang substitute: 1 tbsp Miso paste + 1/2 tsp Soy suace + 1 tsp Cayenne pepper powder
Topping
・Minced green onion
Direction
1. Oil pan. Put minced garlic, ginger, and green onion. Add ground meat, and stir-fry for a while.
2. Add sauce (★), 200ml water, and diced tofu. Cook over medium heat until liquid is reduced by half. Stir occasionally. Be careful not to let tofu fall apart.
3. Mix potato starch with water, and pour into pan. Cook over medium-high heat, stirring constantly, for 1-2 minutes. Be careful not to let tofu fall apart.
Ready to eat!
2. Tofu Hamburger Steak Recipe
Ingredients (for 2 servings)
・4.6 oz (130g) Tofu
・3.5 oz (100g) Ground meat (pork, chicken, or beef)
・1.7 oz (50g) Onion
・1/2 Egg
・1 tbsp Potato starch or Flour
・1 tsp Miso paste or Soy sauce
・Salt and pepper
Ponzu sauce*
・1.5 tbsp Soy sauce
・1 tbsp Rice vinegar
・1/2 tbsp Lemon juice
*You can just use soy sauce instead of ponzu sauce.
Topping
・Fried egg
・Grated daikon
・2-3 sheets of Shiso leaves
Direction
1. Wrap tofu in paper towel and place weight on top. Let sit for 10 minutes and drain off tofu.
2. Shred shiso leaves, and grate daikon for toppings. Make ponzu sauce with soy sauce, rice vinegar, and lemon juice.
3. Mince onion. Put it in bowl. Add tofu, ground meat, beaten egg, potato starch, miso paste, salt and pepper. Knead them well.
4. Form them like hamburger patties. Cook them in pan over medium heat for a few minutes until browned.
5. Turn it over, and put lid on. Cook over low heat for 4-5 minutes.
6. Put grated daikon, shredded shiso, and fried egg as you like. Pour ponzu sauce or soy sauce when eating.
Ready to eat!
3. Easy Tofu Nuggets Recipe
Ingredients (for 2 servings)
・4.6 oz (130g) Tofu
・1 oz (30g) Canned tuna
・1/2 Egg
・1 tbsp Bread crumbs (Panko)
・1 tbsp Flour
・1/2 tsp Oyster sauce
・1/2 tsp Soy sauce
・1/2 tsp Sugar
・Salt and pepper
・Oil for deep-frying
Sauce
・Ketchup
・Mayonnaise

1. Wrap tofu in paper towel and place weight on top. Let sit for 10 minutes and drain off tofu.
2. Put tofu in bowl. Add tuna, beaten egg, bread crumbs, flour, oyster sauce, soy sauce, sugar, salt and pepper. Knead them well.
3. Form into nuggets. Fry in oil for 2-3 minutes on each side.
Ready to eat!
4. Okinawan Stir-fry Dish (Tofu Champuru) Recipe
Ingredients (for 2 servings)
・4.6 oz (130g) Tofu
・3.5 oz (100g) Spam
・3.5 oz (100g) Onion
・1 oz (30g) Carrot
・1oz (30g) Chinese chive
・2 tsp Oil
・1/2 tsp Dashi granules (Hondashi)
・Salt and pepper
・1 Egg
・1/2 tsp Sugar
・Salt and pepper
・1/2 tsp Oil
Direction
1. Wrap tofu in paper towel and place weight on top. Let sit for 10 minutes and drain off tofu. After draining water, tear tofu by hand.
2. Oil a pan. Stir-fry onion and carrot. When they get soft, add spam and tofu.
3. When spam and tofu are browned, add Chinese chive. Sprinkle dashi granules, salt and pepper. Stir to combine.
4. Add sugar, salt and pepper in beaten egg.
5. Make space in pan and spread oil. Make scrambled eggs. Mix eggs and other ingredients.
Ready to eat!
5. Simmered Beef and Tofu (Niku-tofu) Recipe
Ingredients (for 2 servings)
・9 oz (260g) Tofu
・7 oz (200g) Thinly slice beef
・2 oz (60g) Green onion
・1/2 tsp Oil
Sauce★
・0.2 cup (50ml) Water
・2 tbsp Soy sauce
・1.5 tbsp Sake
・1.5 tbsp Sugar
・1.5 tbsp Mirin
・1/2 tsp Dashi granules (Hondashi)
Topping
・Komatsuna (Japanese mustard spinach)
Direction
1. Wrap tofu in paper towel and place weight on top. Let sit for 10 minutes and drain off tofu. Cut tofu into large pieces.
2. Oil pan. Stir-fry beef. When beef changes color, add green onions. Stir-fry a little.
3. Add tofu, and sauce (★). Drop piece of aluminum foil directly on food to cover it entirely. Simmer over low heat for 5 minutes.
4. Turn over beef and tofu. Simmer another 5 minutes. Turn off fire and let cool.
It tastes even better if you let it cool for an hour or so if you have time, as flavors soak in as it cools.
Ready to eat!
6. Deep-fried Tofu with Soup Stock (Agedashi-tofu) Recipe
Ingredients (for 2 servings)
・11 oz (320g) Tofu
・2 tbsp Flour
・Oil for deep-frying
Soup stock
・0.8 cup (200ml) Water
・3 tbsp Soy sauce
・2 tbsp Mirin
・1/2 tsp Dashi granules (Hondashi)
Topping
・Grated daikon
・Minced green onion
Direction
1. Cut tofu into small pieces. Place tofu on paper towel, then place another sheet of paper towel on tofu to gently remove any moisture.
2. Put water, soy sauce, mirin, and dashi granules in pot. Stir and bring to boil.
3. Coat tofu with flour. Fry in oil for 2-3 minutes on each side.
4. Dish up tofu, and pour soup stock. Put grated daikon and green onion.
Ready to eat!
