1. Easy Miso Ramen
Ingredients (for 1 serving)
・4 oz (110g) Ramen noodles
・1.7 oz (50g) Ground pork
・1 tbsp Minced green onion☆
・1 tsp Sesame oil☆
・1/2 tsp Grated garlic☆
・1/2 tsp Grated ginger☆
・1.5 cups (350ml) Water★
・1.5 tbsp Miso paste★
・1/2 tbsp Chicken stock powder★
・1/2 tbsp Sugar★
・1 tsp Sake★
・1 tsp Soy sauce★
・1/2 tsp Oyster sauce★
・A pinch of Chili pepper★
Topping
・Bean sprouts
・Corn
・Green onion
・Boiled egg
Direction
1. Boil bean sprouts. Mince green onion.
2. Mix ☆ in a pot, and stir-fry for 1 minute. Add ★ and stir to combine. Dissolve miso paste well.
3. Boil plenty of water in a different pot and cook the noodles.
4. Heat up the ramen soup and serve in a bowl. Put the drained noodles.
5. Add bean sprouts, boiled egg, green onion, and corn as toppings.
2. Crispy Tempura Udon
Ingredients (for 2 servings)
・14 oz (400g) Boiled udon noodles
Udon soup
・2 cups (500ml) Water☆
・2 tbsp Soy sauce☆
・1 tbsp Sake☆
・1 tsp Sugar☆
・2 tsp Dashi powder☆
Tempura (Kakiage)
・4 oz (110g) Onion
・2.5 oz (70g) Carrot
・1 oz (30g) Shrimp
・4 tbsp Flour★
・2 tsp Potato starch★
・2.5 tbsp Water★
・Oil for frying
Topping
・Spinach
・Kamaboko (Boiled fish paste)
・Minced green onion
Direction
1. Slice onion and shred carrot. Put these and shrimp in a bowl. Add ★ and stir to combine. Fry in oil for 3 minutes on each side until crisp.
2. Put ☆ in a pot. When it boils, add udon noodles. Heat for 2 minutes and it’s done.
3. Serve udon noodles and soup in a bowl, and top with tempura, spinach, kamaboko, and green onion as you like.
3. Addictive Juicy Beef Udon
Ingredients (for 2 servings)
・14 oz (400g) Boiled udon noodles
・Minced green onion (as much as you want)
・2 tsp Oil
・5.3 oz (150g) Thinly sliced beef
・3 tbsp Soy sauce☆
・2 tbsp Sake☆
・1.5 tbsp Sugar☆
・1.5 tbsp Mirin☆
Topping
・Egg yolk (Fried egg)
・Red pickled ginger (Beni-shoga)
・Dried bonito flakes (Katsuobushi)
Direction
1. Oil the pan, stir-fry the beef until the color changes by half.
2. Add ☆ to the pan, and stir-fry until the liquid is gone. Just before turning off the heat, add the green onions and fry lightly.
3. Serve udon noodles in a plate, and top with extra green onion, egg, red pickled ginger, and dried bonito flakes as you like.
4. Authentic Somen Noodles
Ingredients (for 2 servings)
・3.5 oz (100g) Somen noodles
Somen soup (Dipping version)
・1.25 cups (300ml) Water☆
・4 tbsp Soy sauce☆
・4 tbsp Mirin☆
・1/2 tbsp Sugar☆
・1 tsp Dashi powder☆
Topping (Condiment)
・Okra
・Myoga
・Green onion
・Cucumber
Direction
1. Rub salt into okra and boil for 2 minutes. When it cools, thinly slice it. Mince myoga as well. (You can also mince green onion or shred cucumber as you like.)
2. Put ☆ in a pot. Bring to a boil once and stir. Allow to cool before serving.
3. Boil somen noodles for 2 minutes in plenty of water. Drain hot water, and wash well with cold water.
4. Drain the somen noodles and place in a bowl with ice or ice water. Put the cooled soup in a small bowl and dip the somen noodles into it while eating. Serve it with condiment as you like.
5. Authentic Soba Noodles
Ingredients (for 2 servings)
・7 oz (200g) Soba noodles
Soba soup (Dipping version)
・1.25 cups (300ml) Water☆
・4 tbsp Soy sauce☆
・4 tbsp Mirin☆
・1/2 tbsp Sugar☆
・1 tsp Dashi powder☆
Topping (Condiment)
・Nori seaweed
・Green onion
Direction
1. Mince green onion and shred nori seaweed.
2. Put ☆ in a pot. Bring to a boil once and stir. Allow to cool before serving.
3. Boil soba noodles for 5 minutes (follow your package instruction) in plenty of water. Drain hot water, and wash well with cold water.
4. Drain the soba noodles and dish up (top with nori seaweed). Put the cooled soup in a small bowl and dip the soba noodles into it while eating. Serve it with condiment as you like.
6. Most Insanely Delicious Yakisoba (Japanese Stir-fry Noodles)
Ingredients (for 1 serving)
・5 oz (140g) Noodles
・1.7 oz (50g) Thinly sliced pork
・1.7 oz (50g) Cabbage
・1 tbsp Sesame oil (or Vegetable oil)
・1 tsp Sesame oil (or Vegetable oil)
Sauce
・2 tbsp Worcestershire sauce☆
・1/2 tsp Chicken stock powder☆
・1/2 tsp Miso paste☆
・1/2 tsp Oyster sauce☆
・1/2 tsp Sugar☆
Topping
・Dried green seaweed (Aonori)
・Red pickled ginger (Beni-shoga)
Direction
1. Cut cabbage into small pieces. Wash noodles in water. (If you need to boil the noodles, boil and then wash it with cold water.)
2. Mix ☆ in a bowl.
3. Oil the pan (1 tbsp oil). Bake the drained noodles in frying pan. Bake over high heat for 4 minutes on one side, pressing down with a spatula to crisp.
4. Flip it over, and bake over high heat for 1 minute on the other side. Remove noodles once.
5. Cook cabbage and pork with a little more oil (1 tsp oil).
6. When pork is cooked, return the noodles to the pan. Turn off the heat, and add sauce.
7. Loosen the noodles and blend the sauce throughout.
8. Once the sauce is distributed throughout, turn up the heat and cook until the water is gone.
