・4 oz (110g) Ramen noodles
・1.7 oz (50g) Ground pork

・14 oz (400g) Boiled udon noodles

Udon soup

Tempura (Kakiage)
・4 oz (110g) Onion
・2.5 oz (70g) Carrot

・Kamaboko (Boiled fish paste)

1. Slice onion and shred carrot. Put these and shrimp in a bowl. Add ★ and stir to combine. Fry in oil for 3 minutes on each side until crisp.

・5.3 oz (150g) Thinly sliced beef

・1.5 tbsp Sugar☆
・1.5 tbsp Mirin☆

Topping
・Egg yolk (Fried egg)
・Red pickled ginger (Beni-shoga)
・Dried bonito flakes (Katsuobushi)

Direction

1. Oil the pan, stir-fry the beef until the color changes by half.

2. Add ☆ to the pan, and stir-fry until the liquid is gone. Just before turning off the heat, add the green onions and fry lightly.

Ingredients (for 2 servings)

・3.5 oz (100g) Somen noodles

Somen soup (Dipping version)
・1.25 cups (300ml) Water☆
・4 tbsp Soy sauce☆
・4 tbsp Mirin☆
・1/2 tbsp Sugar☆
・1 tsp Dashi powder☆

Topping (Condiment)
・Okra
・Myoga
・Green onion
・Cucumber

Direction

1. Rub salt into okra and boil for 2 minutes. When it cools, thinly slice it. Mince myoga as well. (You can also mince green onion or shred cucumber as you like.)

・Nori seaweed

1. Mince green onion and shred nori seaweed.

Sauce
・2 tbsp Worcestershire sauce☆
・1/2 tsp Chicken stock powder☆
・1/2 tsp Miso paste☆
・1/2 tsp Oyster sauce☆
・1/2 tsp Sugar☆

Topping
・Dried green seaweed (Aonori)
・Red pickled ginger (Beni-shoga)

Direction

1. Cut cabbage into small pieces. Wash noodles in water. (If you need to boil the noodles, boil and then wash it with cold water.)

2. Mix ☆ in a bowl.

3. Oil the pan (1 tbsp oil). Bake the drained noodles in frying pan. Bake over high heat for 4 minutes on one side, pressing down with a spatula to crisp.

4. Flip it over, and bake over high heat for 1 minute on the other side. Remove noodles once.

5. Cook cabbage and pork with a little more oil (1 tsp oil).

6. When pork is cooked, return the noodles to the pan. Turn off the heat, and add sauce.

7. Loosen the noodles and blend the sauce throughout.

8. Once the sauce is distributed throughout, turn up the heat and cook until the water is gone.
