A WEEK OF JAPANESE BREAKFAST RECIPES

[MONDAY]: Mini Rice Balls + Fried Egg + Stir-fried Peppers and Sausages + Simmered Vegetables

Ingredients (for 2 servings)

Mini rice balls
・1 bowl of rice
・Nori seaweed cut into small pieces

Fried egg
・2 Eggs
・2 slices of Ham

Stir-fried peppers and sausages
・2 oz (60g) Green pepper
・2 oz (60g) Sausage or Bacon
・1/2 tsp Soy sauce
・1/2 tsp Sugar

Simmered vegetables
・3.5 oz (100g) Daikon
・1 oz (30g) Carrot
・1 oz (30g) Lotus root
・1 oz (30g) Thin fried tofu or Thick fried tofu
・1/2 tbsp Sake
・1/2 tbsp Soy sauce
・1/2 tbsp Sugar
・1/2 tbsp Mirin
・1/2 tsp Dashi granules or 0.4 cup (100ml) Dashi soup stock

Direction

1. [Mini rice balls] Prepare steamed rice. Make small rice balls using a plastic wrap. Then wrap nori seaweed around rice balls. If your nori seaweed is not seasoned, maybe you should sprinkle a little salt all over the rice balls before wrapping.

2. [Fried egg] Cook the ham a little in your frying pan, and crack the egg on top of the ham. Bake it as you like.

3. [Stir-fried peppers and sausages]Slice the green peppers and sausage. Stir-fry them and add soy sauce and sugar. Mix well, and completed when cooked.

4. [Simmered vegetables] Cut all of the ingredients into bite-sized. Microwave vegetables at 500W for 3-4 minutes.

5. Put the vegetables and thin fried tofu in your pot. Add all of the seasonings. Mix well.

6. Cover and simmer for 5 minutes on low heat. Stir once and simmer again for 5 minutes.

Ready to eat!

[TUESDAY]: Rice + Miso Soup + Grilled Salmon + Japanese Rolled Omelette + Okra Salad + Lotus Root Chips

Ingredients (for 2 servings)

Miso soup
・3.5 oz (100g) Chinese cabbage
・1.5 oz (42g) Tofu
・1.7 cups (400ml) Water
・1 Dashi packet or 1 tsp Dashi granules
・2 tbsp Miso paste

Japanese rolled omelette
・2 Eggs
・1 tsp Shirodashi
・1 tbsp Water

Grilled salmon
・2 slices of Salmon
・A pinch of Salt*

*If your salmon is already salted, please skip it.

Okra salad
・1.5 oz (42g) Okra
・Large pinch of Salt
・1 tsp Shirodashi
・1 tsp Mirin
・2 tsp Water

Lotus root chips
・1 oz (30g) Lotus root
・1 tbsp Oil

Direction

1. [Miso soup] Cut Chinese cabbage into bite-sized, and cut tofu into dice.

2. Put water and dashi packet in a pot, and boil for 5 minutes on low heat after boiling. Please use dashi powder or dashi soup stock as you like.

3. Add Chinese cabbage and tofu in the pot. When cooked, turn off the heat, and dissolve miso paste.

4. [Rolled omelette] Put shirodashi, water, and egg in a bowl. Beat them well. Make rolled omelette in a pan. (Please check the Youtube video.) Pour soy sauce when eating.

5. [Grilled salmon]Sprinkle salt on the surface of salmon. Grill the salmon well. I took about 10 minutes in total baking it with frying pan.

6. [Okra salad] Wash okra well, and rub okra with salt. Boil it in water for 3 minutes.

7. Cut okra into bite-sized. Make the sauce by mixing shirodashi, mirin, and water. Soak the okra in the sauce.

8. [Lotus root chips] Thinly slice the lotus root. Wipe the moisture off the lotus root, and deep-fry them with a little oil until it gets crispy.

Ready to eat!

 

[WEDNESDAY]: 2 Types Rice Balls + Kinpira + Japanese Rolled Omelette + Kombu Pepper

Ingredients (for 2 servings)

2 types rice balls
・2 bowl of rice
・2 Pickled plums
・2 tsp Spicy cod roe

Kinpira
・1 oz (30g) Lotus root
・1 oz (30g) Carrot
・1 tsp Soy sauce
・1 tsp Mirin or Sugar
・1/2 tsp Oil

Japanese rolled omelette
・2 Eggs
・1 tsp Shirodashi
・1 tbsp Water

Kombu pepper
・2 oz (60g) Green pepper
・A pinch of Salted kombu (shio-kombu)
・1/2 tsp Sesame oil
・1/2 tsp Soy sauce
・1/2 tsp Sugar

Direction

1. [2 types rice balls] Prepare steamed rice. Make 2 rice balls, and put pickled plums and spicy cod roe on top.

2. [Kinpira] Shred the carrot, and thinly slice the lotus root. Stir-fry them with oil, and season with soy sauce and mirin.

3. [Rolled omelette] Put shirodashi, water, and egg in a bowl. Beat them well. Make rolled omelette in a pan. (Please check the Youtube video.) Pour soy sauce when eating.

4. [Kombu pepper] Shred green pepper, and microwave it at 500W for 2 minutes. Add salted kombu, sesame oil, soy sauce, and sugar. Mix well.

Ready to eat!

[THURSDAY]: Corn Rice Balls + Bacon Spinach + Kabocha Salad + Scrambled Egg with Tomato

Ingredients (for 2 servings)

Corn rice balls
・1 bowl of rice
・1 tbsp Corn
・1/2 tsp Butter
・A pinch of Salt and pepper

Bacon spinach
・3 oz (85g) Spinach
・1 oz (30g) Bacon
・1/2 tsp Butter
・1/2 tsp Soy sauce

Kabocha salad
・5 oz (140g) Kabocha squash
・1/2 tsp Butter

Scrambled egg with tomato
・2 Eggs
・4 Cherry tomatoes
・1/2 tsp Sugar
・1/2 tsp Oil or Butter

Direction

1. [Corn rice balls] Prepare steamed rice. Mix it with corn, butter, and salt and pepper. Make rice balls using a plastic wrap.

2. [Bacon spinach] Cut spinach and bacon into bite-sized. Stir-fry them and season with butter and soy sauce.

3. [Kabocha salad]Cut kabocha squash into bite-sized, and remove the skin. Microwave it at 500W for 3-4 minutes. 

4. Mash the kabocha and mix it with butter. Add a little milk if it’s hard to make it smooth.

5. [Scrambled egg with tomato] Cut cherry tomatoes in half. Beaten eggs, and mix it with tomatoes and sugar. Make scrambled egg with a little oil or butter.

Ready to eat!

[FRIDAY]: Rice + Miso Soup + Soft Boiled Egg + Natto + Spinach with Sesame Sauce

Ingredients (for 2 servings)

Miso soup
・1 oz (30g) Daikon
・1 oz (30g) Thin fried tofu
・1.7 cups (400ml) Water
・1 Dashi packet or 1 tsp Dashi granules
・2 tbsp Miso paste

Soft boiled egg (Onsen tamago)
・2 Eggs

Spinach with sesame sauce
・3 oz (85g) Spinach
・2 tsp Grind sesame
・1/2 tsp Sugar
・1/2 tsp Soy sauce
・1/2 tsp Sake
・1/2 tsp Vinegar

Direction

1. [Miso soup] Cut Chinese cabbage into bite-sized, and cut tofu into dice.

2. Put water and dashi packet in a pot, and boil for 5 minutes on low heat after boiling. Please use dashi powder or dashi soup stock as you like.

3. Add daikon and thin fried tofu in the pot. When cooked, turn off the heat, and dissolve miso paste.

4. [Soft boiled egg] Prepare a small pot, and boil plenty of hot water. Remove the pot from the heat.

5. Wait for 1 minute, and add 2 eggs into the pot. Wait for 12 minutes without a lid. 

6. After 12 minutes, cool the eggs with cold water for a while. Crack the egg carefully.

7. [Spinach with sesame sauce] Chop spinach, and boil it for 2 minutes. When the spinach has cooled, squeeze and remove as much water as possible from spinach.

8. Put spinach in a bowl, and mix it with grind sesame and all of the seasonings.
