Addictive Air Fryer Crispy Shrimp Cutlet Sandwich a.k.a. Ebi Katsu Sando
Hi everyone! Today, I’m sharing a healthy twist on a Japanese favorite: Ebi-Katsu (Shrimp Cutlet) Sandwich. By using an air fryer and adding mashed potatoes to the filling, we can achieve a satisfying, crispy texture with much less oil. It’s light, flavorful, and perfect for lunch!
Ingredients (1 Serving)
Main Filling:
Shrimp: 120g (4.2 oz)
Onion: 40g (1.4 oz)
Potato: 60g (2.1 oz)
Salt and Pepper: A pinch
Beaten egg: 1 tbsp
Potato starch (Katakuriko): 1 tbsp
Grated ginger: 1/2 tsp
Sake: 1 tsp
Sesame oil (or any vegetable oil): 1 tsp
Coating:
Panko breadcrumbs: 3 tbsp
Oil spray: As needed
For the Sandwich:
White bread: 2 slices
Mayonnaise: 1 tsp
Mustard: 1 tsp
Tonkatsu sauce: 1 tsp
Lettuce: 1 leaf
Instructions
Prepare the Shrimp and Onion: Peel and devein the shrimp, then mince them with a knife until they form a paste. Finely mince the onion.
Prepare the Potato: Peel and cut the potato into bite-sized pieces. Boil until soft enough to be easily pierced with a fork. Drain the water, mash the potato thoroughly into a smooth paste, and let it cool.
Mix the Filling: In a bowl, combine the minced shrimp, cooled mashed potato, and minced onion. Add the seasonings (salt, pepper, egg, starch, ginger, sake, and sesame oil) and mix well until sticky.
Shape and Coat: Form the mixture into a patty (similar to a croquette shape) that fits your bread. Coat the entire surface evenly with panko breadcrumbs.
Air Fry: Place the patty in the air fryer and spray with a bit of oil. Cook at 200°C (392°F) for 5 minutes. Flip the patty, spray the other side with oil, and cook for another 7 minutes at the same temperature.
Assemble the Sandwich: Spread mayonnaise, mustard, and Tonkatsu sauce on the bread. Place the lettuce and the freshly cooked shrimp cutlet between the slices. Enjoy!
Cooking Tips
Mashing the Potato: Make sure the mashed potato is smooth and cooled down before mixing; this helps the patty hold its shape.
Customization: Feel free to adjust the sauce or add ingredients like sliced cabbage or tomatoes to suit your taste!
