Addictive Air Fryer Japanese Sweet Miso Chicken!

Saikyo Yaki is a classic Japanese dish known for its sweet and savory miso glaze. While it’s traditionally grilled, using an air fryer makes it incredibly easy and gives the chicken a perfect texture. Here is how to make this authentic flavor at home!

Ingredients (1 Serving)

  • 260g (9.2 oz) Chicken Thigh (with skin)

[Saikyo Sauce]

  • 2 tbsp Saikyo Miso (or White Miso)

  • 1 tbsp Mirin

  • 1/2 tbsp Sake

  • 1/2 tsp Soy Sauce

  • 1 tsp Sugar (Reduce to 1/2 tsp if using Saikyo Miso)

  • 1 tsp Oil (Any type you prefer)

  • Extra Oil Spray (Optional)


Instructions

  1. Prepare the Chicken: Remove any excess fat or tendons from the chicken thigh.

  2. Marinate: In a small bowl, mix all the Saikyo Sauce ingredients. Coat the chicken with the sauce, applying most of it to the flesh side and only a thin layer on the skin.

  3. Rest: Let the chicken marinate in the refrigerator for at least 30 minutes. For the best flavor, leave it for a few hours or even overnight.

  4. Air Fry (First Side): Place the chicken in the air fryer basket, skin-side down. Spray a few bursts of oil over it. Cook at 200°C (392°F) for 11 minutes.

  5. Flip and Brown: Flip the chicken skin-side up and air fry at the same temperature (200°C / 392°F) for another 5 minutes until the skin is golden.

  6. Serve: Slice the chicken into bite-sized pieces and enjoy!


Pro-Tip

If you cannot find Saikyo Miso or white miso, regular red miso works fine as well. Don’t forget to adjust the amount of sugar to suit your taste preference!
