This Addictive Ginger Pork Rice Bowl is My New Obsession!
If you have pork in your fridge, you have to make this! Today, I’m sharing my recipe for the Ultimate Ginger Pork Bowl, or Shogayaki Don. The secret lies in the double-ginger technique: using the juice for the marinade and the grated fiber for the sauce. It makes the pork incredibly tender and flavorful.

Ingredients (1 Serving)
Main Ingredients
Cooked Rice: 200g (7 oz)
(If cooking from raw: 90g / 3.2 oz)
Thinly Sliced Pork Loin: 100g (3.5 oz)
Onion: 50g (1.8 oz)
Ginger: 30g (1 oz)
Note: You will grate this. Squeeze out 1 tsp of juice for the marinade, and keep the rest of the grated ginger for the sauce.
Vegetable Oil: 2 tsp (Divided use)
【Pork Marinade】
Mirin: 1 tbsp
Sake: 1 tbsp
Ginger Juice: 1 tsp (Squeezed from the fresh ginger above)
【The Sauce】
Grated Ginger: The rest of the ginger from above
Soy Sauce: 2 tbsp
Sugar: 1 tbsp
Ketchup: 1 tsp
Sesame Oil: 1/2 tsp
Garlic (grated): 1/2 tsp
White Pepper: A dash
Instructions
Prep the Ingredients
Lightly score the pork loin with a knife on both sides to cut the connective tissue (do not cut all the way through) to prevent curling. Slice the onion into thin half-moons. Grate the ginger; separate 1 tsp of the juice for the marinade and keep the rest of the pulp for the sauce.Marinate the Pork
In a bowl or tray, mix the Marinade ingredients (Mirin, Sake, Ginger Juice). Soak the pork in this mixture for about 10 minutes.Mix the Sauce
While the meat is marinating, combine all the Sauce ingredients (remaining grated ginger, soy sauce, sugar, ketchup, sesame oil, garlic, white pepper) in a small bowl and mix well.Sauté the Onions
Heat a frying pan and add 1 tsp of oil. Fry the onions until they soften, then move them to the side of the pan.Sear the Pork
Add the remaining 1 tsp of oil to the empty space in the pan. Add the pork slices and sear them until they get a nice golden brown char.Add the Sauce
Once the pork is cooked through, pour the mixed sauce over the meat and onions. Toss everything together to coat well.Serve
Place the pork and onions on top of the hot rice in a bowl. Pro Tip: Let the remaining sauce in the pan simmer and thicken slightly, then drizzle it over the top of the bowl for the perfect finish!
