Addictive Slow Cooker Japanese Miso Spare Ribs a.k.a. DOTENI

“Doteni” is a classic Japanese comfort dish, traditionally made by simmering meat and vegetables in a rich, dark miso sauce. Using a slow cooker makes the spare ribs incredibly tender and allows the deep flavors of the Hatcho Miso to soak into every bite.

Unlike the common miso made with rice koji, Hatcho Miso is made entirely from soybean koji, giving it a very unique and bold flavor. I’ve put a link to it here, so definitely check it out if you’re interested. It offers a completely different flavor profile compared to standard miso!

Ingredients (Per Person)

  • Pork Spare Ribs: 150g (5.3 oz)

  • Daikon Radish: 70g (2.5 oz)

  • Carrot: 40g (1.4 oz)

  • Ginger: 2.5g (0.09 oz)

  • Hard-boiled Egg: 1

  • Water: 125ml (0.53 US cup)

The Sauce Mix (★):

  • Soybean Miso (Hatcho Miso): 25g (0.88 oz)

  • White Miso: 13g (0.46 oz)

  • Sake: 22ml (0.09 US cup)

  • Mirin: 20ml (0.08 US cup)

  • Sugar: 13g (0.46 oz)
    (Note: You can use just one type of miso if preferred.)


Instructions

  1. Prep the Ingredients: Cut the daikon radish into bite-sized pieces and thinly slice the ginger. Prepare your hard-boiled eggs. In a pan over high heat, sear the surface of the spare ribs until they are nicely browned.

  2. Prepare the Miso Sauce: In a bowl, combine the sauce ingredients (marked with ★). Hatcho Miso has a very low moisture content and can be firm, so take your time to whisk it with the sake and mirin until the mixture is smooth.

  3. Slow Cook: Place the seared spare ribs, ginger, daikon, and hard-boiled eggs into the slow cooker. Pour in the prepared miso sauce and water.

  4. Simmer: Cover and cook on low for about 8 hours until the meat is tender and the flavors are deeply infused.

Based on a slow cooker size of approx. 14 x 10 x 10 inches.

  • Pork Spare Ribs: 600g (21.2 oz)

  • Daikon Radish: 280g (9.9 oz)

  • Carrot: 160g (5.6 oz)

  • Ginger: 10g (0.35 oz)

  • Hard-boiled Eggs: 2

  • Water: 500ml (2.11 US cup)

The Sauce Mix (★):

  • Soybean Miso (Hatcho Miso): 100g (3.5 oz)

  • White Miso: 50g (1.8 oz)

  • Sake: 90ml (0.38 US cup) / 6 tbsp

  • Mirin: 80ml (0.34 US cup) / 5 tbsp

  • Sugar: 54g (1.9 oz) / 6 tbsp
