This Addictive Air Fryer Japanese Miso Butter Salmon is My New Obsession!
Looking for a quick, healthy, and flavorful Japanese meal? Today, I’m sharing how to make “Chan-chan Yaki”—a traditional Hokkaido specialty featuring salmon and vegetables steamed in a savory miso sauce—all made easily in your air fryer! Using parchment paper helps lock in all the juices for a tender, delicious result.
Ingredients (1 Serving)
Main Ingredients:
Salmon: 80g (2.8 oz)
Onion: 50g (1.8 oz)
Mushrooms: 30g (1.1 oz)
Canned corn: 20g (0.7 oz)
Sauce:
Miso: 1 tbsp
Sake: 1 tbsp (0.06 US cup)
Sugar: 1 tsp
Toppings:
Chopped green onions: 10g (0.4 oz)
Coarse ground black pepper: 1 pinch
Butter: 1/2 tsp
Instructions
Prepare the vegetables: Thinly slice the onion and mushrooms. Finely chop the green onions for the topping.
Make the sauce: In a small bowl, mix the miso, sake, and sugar until smooth.
Layer the ingredients: Place a large sheet of parchment paper on your work surface. Layer the onion and mushrooms in the center, then drizzle about half of the sauce over them.
Wrap it up: Place the corn and the salmon fillet on top. Pour the remaining sauce over the salmon. Fold the parchment paper and seal the edges tightly to prevent any steam or juices from escaping (check the video for the specific folding technique!).
Air Fry: Place the parchment parcel in the air fryer and cook at 205°C (401°F) for 12 minutes.
Finish and Serve: Carefully open the hot parchment paper. Add the chopped green onions, black pepper, and butter on top to finish. Enjoy!

You can easily swap the mushrooms for other varieties like Shiitake, Shimeji, or King Oyster mushrooms depending on what you have in your fridge!
