If you’re looking for a quick, healthy, and high-protein breakfast or side dish, this Quiche-Style Tamagoyaki is for you! It combines the fluffy texture of Japanese omelets with the savory richness of a quiche—all made easily in an air fryer without a crust. The secret ingredient is miso, which adds a deep umami flavor that pairs perfectly with the cheese and shrimp.

Ingredients (1 Serving)

  • 3 Eggs

  • 2 tbsp Milk (or heavy cream)

  • 1 tbsp Parmesan cheese (or any shredded cheese of your choice)

  • 2 tsp Mayonnaise

  • 2 tsp Miso

  • A dash of Dashi powder (Substitute: a pinch of salt or your favorite stock powder)

  • 50g (1.8 oz) Shrimp

  • Salt and Pepper (to season the shrimp)

  • 1 Shiitake mushroom (Substitute: 1 button mushroom)

  • 10g (0.35 oz) Green onions


Instructions

  1. Prepare the container: Find an air fryer-safe dish or container that can hold liquid. Line it with parchment paper to prevent sticking and to make it easy to remove later.

  2. Whisk the eggs: Crack the 3 eggs directly into the prepared container and whisk them lightly.

  3. Mix the seasonings: In a separate small bowl, combine the milk, parmesan cheese, mayonnaise, miso, and dashi powder. Mix well until smooth.

  4. Combine: Pour the seasoning mixture into the container with the eggs and stir until well combined.

  5. Add the fillings: Season the shrimp with a bit of salt and pepper. Add the shrimp, sliced mushrooms, and chopped green onions into the egg mixture.

  6. Air Fry: Place the container in the air fryer. Cook at 190°C (374°F) for 15 minutes.

  7. Serve: Once the top is golden brown and the eggs are set, carefully remove it from the air fryer, slice, and enjoy!


Cooking Tips

  • Cheese choice: While I used Parmesan for a sharp kick, mozzarella or cheddar works great if you want a melty texture.

  • Miso tip: If your miso is firm, mix it with the milk first to dissolve it before adding other seasonings to ensure there are no salty clumps in your quiche.
