1. Chicken Meatball Miso Soup
Ingredients (for 2 servings)
・5 oz (140g) Bok choy
・1 oz (30g) Carrot
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・A pinch of Dashi powder
Chicken meatballs
・4.6 oz (130g) Ground chicken
・5 sheets of Shiso leaves (optional)
・1/2 clove of Garlic
・1 tsp Grated ginger☆
・1 tsp Oyster sauce☆
・1 tsp Soy sauce☆
・1/2 tsp Sugar☆
Topping
・Sesame seeds
Direction
1. Cut bok choy and carrot into small pieces. Mince shiso leaves and garlic, and mix them with ground chicken. Add ☆ to the meat and knead well.
2. Put water, dashi powder and carrots in a pot and bring to a boil. Cook for a few minutes until carrots are slightly tender. Spoon meatballs from bowl of chicken mixture. Drop them into the boiling broth.
3. When the meatballs are almost cooked, add bok choy. Heat for 1 to 2 minutes and turn off the heat. Dissolve miso paste and it’s done!
2. Okra and Egg Drop Miso Soup
Ingredients (for 2 servings)
・1.4 oz (40g) Okra
・1 Egg
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・A pinch of Dashi powder
Direction
1. Wash okra and rub salt into okra surface. Wait for 1 minute and rinse well. Mince okra.
2. Put water in a pot and bring to a boil. Add okra and dashi powder, then cook for 1 minute.
3. Make sure it is boiling strongly, and drop beaten egg. When the egg is cooked turn off the heat. Dissolve miso paste and it’s done!
3. Daikon and Fried Tofu Miso Soup
Ingredients (for 2 servings)
・2 oz (60g) Daikon
・1 sheet of Thin fried tofu (Abura-age)
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・A pinch of Dashi powder
Topping
・Minced green onion
Direction
1. Shred daikon and fried tofu.
2. Put water, daikon, and fried tofu in a pot and bring to a boil. Cook until daikon is soft.
3. Add dashi powder. When the daikon is cooked turn off the heat. Dissolve miso paste and it’s done!
4. Tofu and Wakame Miso Soup
Ingredients (for 2 servings)
・4.6 oz (130g) Tofu
・1-2 tsp Dried wakame seaweed
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・A pinch of Dashi powder

1. Dice tofu. Put water in a pot and bring to a boil. Add tofu and bring to a boil again.
2. Add dashi powder and dried wakame seaweed. After simmering for 2 minutes, turn off the heat. Dissolve miso paste and it’s done!
5. Kabocha Miso Soup
Ingredients (for 2 servings)
・5 oz (140g) Kabocha squash
・1.4 oz (40g) Onion
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・A pinch of Dashi powder
Topping
・Cheese
・Black pepper
Direction
1. Slice onion and cut kabocha into small pieces.
2. Put water, kabocha, and onion in a pot and bring to a boil. Cook until kabocha is soft.
3. Add dashi powder. When the kabocha is cooked turn off the heat. Dissolve miso paste and it’s done!
6. Tonjiru
Ingredients (for 2 servings)
・2.8 oz (80g) Thinly sliced pork
・2.8 oz (80g) Tofu
・1.7 oz (50g) Daikon
・1.4 oz (40g) Carrot
・1.4 oz (40g) Burdock root (Gobo)
・1.7 cups (400ml) Water
・1 tbsp Sake (optional)
・2 tbsp Miso paste
・A pinch of Dashi powder
Topping
・Minced green onion
・Shichimi (Nanami) togarashi (Japanese seven spices)
Direction
1. Cut all the ingredients into small pieces.
2. Put water, daikon, carrot, and gobo in a pot and bring to a boil. Cook until these vegetables are almost soft.
3. Add tofu and dashi powder. Bring to a boil and add pork and sake. When the vegetables are cooked turn off the heat. Dissolve miso paste and it’s done!
7. Ultimate Egg Miso Soup
Ingredients (for 2 servings)
・2 Eggs
・1.4 oz (40g) Onion
・1 oz (30g) Carrot
・2 tbsp Minced green onion
・1 tsp Dried wakame seaweed
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・A pinch of Dashi powder
Direction
1. Slice onion and carrot.
2. Put water, onion, and carrot in a pot and bring to a boil. Cook until these vegetables are almost soft.
3. Add dried wakame seaweed, minced green onion, and dashi powder. Bring to a boil.
4. After making sure the water is boiling, crack the eggs into the pot. When the eggs are cooked to the desired consistency, turn off the heat. Dissolve miso paste and it’s done!
8. Ultimate Salmon Miso Soup
Ingredients (for 2 servings)
・A slice of Salmon
・1 tbsp Sake
・1.4 oz (40g) Cabbage
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・A pinch of Dashi powder
Direction
1. Cut salmon and cabbage into small pieces. Pour sake over salmon and let stand for 1 minute.
2. Put water and cabbage in a pot and bring to a boil. Cook until the cabbage is slightly soft.
3. Add salmon and dashi powder. Bring to a boil.
4. When the salmon is cooked turn off the heat. Dissolve miso paste and it’s done!
9. Ultimate Creamy Miso Soup
Ingredients (for 2 servings)
・1.4 oz (40g) Potato
・1 oz (30g) Carrot
・1 oz (30g) Onion
・Sausages
・Cherry tomatoes
・0.8 cups (200ml) Water
・0.8 cups (200ml) Soy milk or Milk
・2 tbsp Miso paste
・A pinch of Dashi powder
Topping
・Parsley
Direction
1. Cut all the ingredients into small pieces.
2. Put water, carrot, and onion in a pot and bring to a boil. Cook until these vegetables are slightly soft.
3. Add potatoes, sausages, and dashi powder. Cook until potatoes are soft.
4. Add soy milk (or milk) and cherry tomatoes. When the soup comes to a slight boil, turn off the heat. Dissolve miso paste and it’s done!
10. Rich and Spicy Chicken Miso Soup
Ingredients (for 2 servings)
・2.8 oz (80g) Chicken
・5 oz (140g) Bok choy
・1.4 oz (40g) Onion
・1.7 cups (400ml) Water
・1/2 clove of Garlic☆

・1.5 tbsp Miso paste☆
・1 tsp Ground white sesame seeds☆

11. Devilishly Addictive Onigiri
Ingredients (for 2 servings)
・12.7 oz (360g) Cooked rice
・2 tbsp Tempura bits (Ten-kasu)
・1 tbsp Mentsuyu
・Minced green onion
・Red pickled ginger
・Aonori
Direction
1. Mix all ingredients well with cooked rice to make rice balls of your desired size.
12. Perfect Yaki Onigiri
Ingredients (for 2 servings)
・12.7 oz (360g) Cooked rice
・1 tbsp + 1 tsp Soy sauce
・1/2 tbsp Mirin
・1/2 tbsp Sesame oil
・A pinch of Dashi powder
・White sesame seeds
Direction
1. Mix all ingredients well with cooked rice to make rice balls of your desired size.
2. Bake in a toaster oven until crispy on the outside. If you have a kitchen torch, a little searing at the finish is even better.
