Ingredients (Serves 1)

Main Ingredients:

  • Beef: 180g (approx. 6.35 oz), thinly sliced (beef round is recommended)

  • Broccoli: 150g (approx. 5.3 oz), cut into bite-sized florets

  • Garlic: 1 clove, minced

  • Cooking Oil: 1 tbsp (e.g., vegetable), divided (1 tsp for beef + 1 tsp for broccoli + 1 tsp for garlic)

For the Beef Marinade:

  • Soy Sauce: 1 tsp

  • Sake (or white cooking wine): 1 tsp

  • Potato Starch or Cornstarch: 1.5 tsp

  • Cooking Oil: 1 tsp

  • Baking Soda: 1/3 tsp (This is a secret to super tender beef!)

For the Stir-fry Sauce:

  • Soy Sauce: 1.5 tbsp

  • Mirin (Japanese sweet cooking wine): 1 tbsp

  • Oyster Sauce: 0.5 tbsp

  • Sugar: 0.5 tbsp

  • Miso Paste: 1 tsp (any type you have)

  • MSG (Ajinomoto) (optional): A tiny pinch


Instructions (Let’s Cook!)

  1. Prep the Stars: If not already, thinly slice your beef against the grain. Cut broccoli into bite-sized florets. Finely mince the garlic.

  2. Marinate Beef & Mix Sauce: In a bowl, combine the thinly sliced beef with all the beef marinade ingredients (soy sauce, sake, potato starch, oil, and baking soda). Mix well with your hands, ensuring each piece is coated. Let it sit for at least 5-10 minutes. In a separate small bowl, whisk together all the stir-fry sauce ingredients (soy sauce, mirin, oyster sauce, sugar, miso, and MSG if using). Set aside.

  3. Sear the Beef: Heat 1 tsp of oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer (cook in batches if necessary to avoid overcrowding, which steams the beef). Stir-fry for 1-2 minutes until nicely browned but not fully cooked through. Remove the beef from the pan and set aside.

  4. Cook Broccoli & Aromatics: To the same pan, add another 1 tsp of oil. Add the broccoli florets and stir-fry for 2-3 minutes until they turn bright green and are tender-crisp. (You can add a tablespoon of water and cover for a minute to steam them a bit if you prefer softer broccoli). Push the broccoli to one side of the pan.

  5. Sauté Garlic & Combine: Add the remaining 1 tsp of oil to the empty space in the pan. Add the minced garlic and stir-fry for about 30 seconds until fragrant (be careful not to burn it!).

  6. Bring It All Together: Return the cooked beef to the pan with the broccoli and garlic. Pour the prepared stir-fry sauce over everything.

  7. Finish & Thicken: Stir-fry continuously over medium heat for another 1-2 minutes, allowing the sauce to bubble and thicken slightly, coating the beef and broccoli beautifully.

  8. Serve Hot! Transfer to a plate and enjoy immediately, perhaps with a bowl of steamed Japanese rice.
