Craving a flavorful and satisfying Japanese-inspired meal, but short on time and ingredients? This Chicken Cabbage Rice Bowl (鶏キャベツ丼 – Tori Kyabetsu Don) is the perfect solution! With just 3 main ingredients and a few pantry staples, you can whip up this delicious and comforting dish in under 30 minutes. Let’s get cooking!

Ingredients:

  • Rice: 1合 (150g) / (5.3 oz)

  • Sake: 2 tablespoons (Optional)
  • Chicken: 200g (7 oz), any cut (thigh, breast, etc.)

  • Cabbage: 50g (1.8 oz), roughly chopped

  • Vegetable Oil: As needed

For the Sauce:

  • Mirin: 2 tablespoons

  • Soy Sauce: 2 tablespoons

  • Sugar: 1 tablespoon

Instructions:

  1. Prepare the Rice: Wash the rice thoroughly by rinsing it several times until the water runs mostly clear. This removes excess starch and helps create perfectly fluffy rice.

  2. Cook the Rice: Add water to the rice cooker up to the 1合 mark. For extra flavor and a glossy finish, add 2 tablespoons of sake to the rice before cooking. The sake adds sweetness and enhances the overall taste. (If you don’t have sake, just use water to the 1合 mark).

  3. Prep the Cabbage: Roughly chop the cabbage into bite-sized pieces.

  4. Make the Sauce: In a small bowl, combine the mirin, soy sauce, and sugar. Mix well until the sugar is dissolved.

  5. Cook the Chicken: Heat a little oil in a frying pan over medium heat. Add the chicken and cook until browned on all sides.

  6. Add Sauce to Chicken: Add about 1 tablespoon of the prepared sauce to the chicken.

  7. Glaze the Chicken: Continue to cook the chicken, coating it with the sauce, until it’s cooked through and slightly caramelized. For an extra touch, use a kitchen torch to create some charred edges. Remove the chicken from the pan and set aside.

  8. Cook the Cabbage: Clean the frying pan (or use a separate one). Heat a little more oil and sauté the cabbage until it starts to soften. Then add the remaining sauce and cook until the cabbage is tender and glazed. You can cook the chicken and cabbage together, if you like.

  9. Assemble the Bowl: Once the rice is cooked, spoon it into a bowl. Drizzle some of the remaining sauce over the rice.

  10. Top and Serve: Arrange the cooked chicken and cabbage over the rice. Drizzle with any remaining sauce from the pan. Serve immediately and enjoy!
