Easy Healthy Japanese Breakfast – Edamame Rice Balls (Onigiri) Recipe

Edamame Rice Balls + Miso Stir-fried Eggplant + Boiled Spinach + Japanese Rolled Omelette

Ingredients (for 1 serving)

Edamame rice balls
・5.3 oz (150g) Cooked rice
・1 oz (30g) Edamame
・1 tbsp Salted kombu
・1-1/2 tsp Sesame oil

Miso stir-fried eggplant
・3.5 oz (100g) Eggplant
・0.7 oz (20g) Bacon
・1 tsp Miso paste
・1.5 tsp Mirin
・1/2 tsp Sugar
・1 tsp Sesame oil

Boiled spinach
・1.4 oz (40g) Spinach
・1 tsp Dried bonito shavings

Japanese rolled omelette
・2 Eggs
・1-1/2 tsp Sugar
・1 tsp Oil

・Sausage

・Carrot
・Salt and pepper

Direction

1. [Edamame rice balls] Microwave frozen edamame, and take the beans out from the pods.

2. Mix edamame, salted kombu, and cooked rice in a bowl. Please add a little sesame oil if you have one. Mix well, and make rice balls using a plastic wrap.

3. [Miso stir-fried eggplant] Cut eggplant into bite-sized, and slice bacon. Stir-fry the eggplant with sesame oil, and add bacon. Season it with miso paste, mirin, and sugar.

4. [Boiled spinach] Chop spinach, and boil it for 2 minutes. When the spinach has cooled, squeeze and remove as much water as possible from spinach. Sprinkle dried bonito shavings and soy sauce when eating.

5. [Japanese rolled omelette] Crack eggs into a bowl, and add sugar. Beat the eggs. Make rolled omelette in a pan. (Please check the Youtube video.) Pour soy sauce when eating.

6. [Other side dish] Bake sausage and sliced carrot for the quick side dish.
