Welcome back to my kitchen! Today, I’m excited to share a recipe that’s become a favorite for a quick, satisfying, and flavor-packed meal: Rayu (Chili Oil) Chicken Noodle Bowl.

This dish combines tender chicken, crisp cabbage, and chewy noodles, all tossed in a vibrant, homemade Miso Rayu (Chili Oil) sauce. It has a wonderful savory depth from the miso and a nice kick from the chili oil. Perfect for a weeknight dinner or a tasty lunch!

Ingredients

(Serves 1)

For the Noodle Bowl:

  • Chinese-style Noodles: 110g (approx. 3.9 oz) – Ramen noodles work great, but feel free to use your favorite type!

  • Cabbage: 100g (approx. 3.5 oz), roughly chopped into bite-sized pieces

  • Chicken: 130g (approx. 4.6 oz), cut into bite-sized pieces

  • Garlic: 1/2 clove, thinly sliced

  • Vegetable Oil: 1 tsp + 1 tsp (separated)

  • Salt: A pinch

  • Miso Paste: 1 tbsp

  • Homemade Rayu (Chili Oil): 1 tbsp (See recipe below)

For the Homemade Rayu (Makes approx. 1 tbsp*):
*I recommend making a larger quantity and storing it. It can be used for a variety of dishes.

  • Garlic: 1/2 clove, minced

  • Sesame Oil: 0.5 tbsp

  • Vegetable Oil: 1 tsp

  • Soy Sauce: 0.5 tbsp

  • Red pepper flakes or Cayenne pepper: 1 tsp (Adjust to your spice preference)

  • Sugar: A pinch

  • Salt: A pinch


Instructions (Step-by-Step)

Making this delicious noodle bowl is easier than you think! Here’s how:

  1. Make the Homemade Rayu: In a small saucepan, combine the minced garlic, sesame oil, vegetable oil, soy sauce, red pepper flakes (or cayenne pepper), sugar, and salt. Place over low heat. Stir constantly and heat gently until the garlic is fragrant and lightly crispy, but be careful not to burn it. (Caution: The oil will be very hot). Remove from heat and set aside. You’ll use 1 tbsp of this for the noodle bowl.

  2. Cook the Noodles: Bring a large pot of water to a rolling boil. Add the noodles and cook according to the package directions until al dente. Drain the noodles immediately and rinse them under cold running water to stop the cooking and remove excess starch. Drain very well, shaking off as much water as possible. Set aside.

  3. Cook the Chicken: Heat 1 tsp of vegetable oil in a frying pan or wok over medium heat. Add the sliced garlic and stir-fry briefly until fragrant (about 30 seconds). Add the bite-sized chicken pieces, season with a pinch of salt, and cook, stirring occasionally, until the chicken is fully cooked through. Remove the chicken and garlic from the pan and set aside.

  4. Stir-fry Cabbage & Combine: Add the remaining 1 tsp of vegetable oil to the same pan and turn the heat up to medium-high. Add the chopped cabbage and stir-fry quickly until it’s slightly wilted but still retains some crunch.

  5. Add Sauce & Noodles: Turn off the heat temporarily. Push the cabbage to one side of the pan. In the clear space, add 1 tbsp of the homemade Rayu and 1 tbsp of miso paste. Stir the Rayu and miso together briefly to combine.

  6. Toss Everything Together: Add the cooked noodles and the cooked chicken (with garlic) back into the pan with the cabbage and sauce. Toss everything together thoroughly, ensuring the noodles, chicken, and cabbage are evenly coated with the Miso Rayu sauce.

  7. Final Fry: Turn the heat back on to medium. Continue to stir-fry for 1-2 minutes, allowing any excess moisture to evaporate and all the ingredients to heat through evenly.

  8. Serve: Once everything is well-mixed and heated, transfer your Rayu Chicken Noodle Bowl to a plate or bowl and enjoy immediately!
