Welcome back to my kitchen. Today, I’m excited to share a recipe that’s a fun and super easy twist on a Japanese classic: Omurice-Style Ground Beef Donburi, or “Omu-Don”!

If you love the comforting flavors of Omurice (omelet over rice) but want a quicker, simpler version, this rice bowl is for you. We’re using savory ground beef and a special, flavor-packed sauce that comes together in minutes. It’s the perfect meal for a busy weeknight.

Ingredients

Here is what you’ll need. I’ve included both metric and US customary measurements for your convenience!

For the Ground Beef & Onion:

  • Ground Beef: 100g (approx. 3.5 oz)

  • Onion: 80g (approx. 2.8 oz, or about 1/2 of a small onion), finely chopped

  • Vegetable Oil: 1/2 tsp (for cooking onion)

  • Salt & Pepper: A pinch

  • Extra Coarsely Ground Black Pepper: To taste (optional, but recommended!)

For the Egg:

  • Egg: 1 large

  • Salt & Pepper: A pinch

  • Vegetable Oil: 1/2 tsp (for cooking egg)

For the Special Sauce:

  • Miso Paste: 1 tbsp (15ml / approx. 1/16 US cup)

  • Mirin (Sweet Rice Wine): 1 tbsp (15ml / approx. 1/16 US cup)

  • Ketchup: 1/2 tbsp (7.5ml / approx. 1/32 US cup)

  • Sugar: 1 tsp

  • Dashi Powder: A small pinch

  • Water: 2 tbsp (30ml / approx. 1/8 US cup)

  • Tonkatsu Sauce: 2 tsp

For Assembly:

  • Cooked Japanese Rice: 200g (approx. 7 oz), or as much as you like

  • Fresh Parsley: For garnish, finely chopped


Instructions

Follow these simple steps to create your delicious Omu-Don!

Step 1: Cook the Beef and Onion
First, finely chop the onion. Heat 1/2 tsp of oil in a frying pan over medium heat and sauté the onion until it becomes soft and slightly browned. Add the ground beef, season with a pinch of salt and pepper, and cook until the meat is fully browned. For extra flavor, add a generous amount of coarse black pepper. Once cooked, transfer the mixture to a plate and set it aside.

Step 2: Prepare the Special Sauce
In the same frying pan (no need to wash it!), combine all the ingredients for the sauce: miso, mirin, ketchup, sugar, dashi powder, water, and tonkatsu sauce. Whisk everything together over low-medium heat. Let it gently bubble and simmer for a minute or two until the sauce thickens slightly. Pour the sauce into a small bowl and set aside.

Step 3: Make the Soft Omelet
Crack the egg into a bowl, season with a pinch of salt and pepper, and whisk well. Wipe the frying pan clean, add 1/2 tsp of oil, and heat it over medium-low heat. Pour in the beaten egg and cook, swirling the pan to create a thin, soft omelet. Cook it to your desired doneness.

Step 4: Assemble Your Omu-Don!
Now for the fun part! Add your hot cooked rice to a bowl. Top the rice with the ground beef and onion mixture. Gently slide the soft omelet on top of the beef.

Step 5: Garnish and Serve
Drizzle your special sauce over the egg. Garnish with some fresh, chopped parsley for a pop of color. Your “Omurice-Style Ground Beef Bowl” is ready to enjoy!
