1. Pork Daikon Bowl
Ingredients (2 servings)
・Cooked rice (as much as you want)
・5.6 oz (160g) Pork fillet
・8 oz (230g) Daikon
・2.5 oz (70g) Green onion (Negi)
・0.8 cup (200ml) Water
・2 tbsp Soy sauce
・2.5 tbsp Mirin
・1 tbsp Sake
・1 tbsp Sugar
・2 Boiled eggs
・1/2 tsp Potato starch
・1 tsp Water
Topping
・Red pickled ginger (Beni-shoga)
Direction
1. Cut pork, daikon, and green onion into small pieces. Slit the daikon to allow the flavor to soak in quickly.
2. Cook daikon in microwave for 4-5 minutes at 500W.
3. Put daikon, water, sugar, and mirin in a pot. Bring to a boil, and add pork, soy sauce, and sake. Bring to a boil again and scoop out any scum that floats to the surface. Simmer for 10 minutes without lid.
4. In a separate pot, make boiled eggs. Take some of the broth from the pot of meat in a bowl and submerge the boiled eggs in it to soak up the flavor.
5. Serve rice in a bowl and top it with pork, daikon, green onion, and egg.
If desired, make the sauce for the pork. Take 4-5 tablespoons of the broth in which the meat was cooked in a small saucepan or frying pan and add a small amount of potato starch dissolved in water. Simmer until thickened. Pour that sauce over the pork and daikon.
2. Chicken and Broccoli Addictive Bowl
Ingredients (2 servings)
・Cooked rice (as much as you want)
・8 oz (230g) Chicken
・Salt and pepper
・4 tbsp Potato starch
・5.3 oz (150g) Lotus root (Renkon)
・3.5 oz (100g) Broccoli
・2 tbsp Soy sauce☆
・2 tbsp Mirin☆
・1 tbsp Oyster sauce☆
・1/2 tbsp Sugar☆
・1 tsp Grated garlic☆
・1 tsp Grated ginger☆
・2 tbsp Oil
Topping
・Sesame seeds
Direction
1. Cut chicken, lotus root, and broccoli into small pieces. Sprinkle salt and pepper on chicken. Coat all the ingredients with potato starch.
2. Fry chicken with a little oil for 3 minutes on each side until slightly browned. Remove once and fry the lotus root and broccoli with a little oil.
3. Return the chicken to the pan. Add the mixture of ☆. Toss well with the sauce. Serve this chicken on top of rice to complete the dish.
