The best part? While we use a few flavor enhancers, the core of this dish truly shines with just 4 main ingredients: tender chicken, slurp-worthy noodles, nutritious eggplant, and that irresistible sesame flavor. It’s perfect for a quick weeknight dinner or a satisfying and healthy lunch.

Ingredients (Serves 1)
Here’s what you’ll need. I’ve included both metric and approximate imperial (US) measurements for you!
For the Chicken & Noodles:
Fresh Chinese Noodles (Ramen Noodles): 110g (approx. 3.9 oz)
Chicken Tenderloin: 150g (approx. 5.3 oz)
Soy Sauce: 1 tsp
Sake: 1 tsp
Salt and Pepper: a pinch
Potato Starch: 1 tbsp
Vegetable Oil (or salad oil): 1 tbsp
For the Stir-Fry:
Eggplant: 230g (approx. 8.1 oz), cut into bite-sized pieces
Sesame Oil: 1 tbsp
For the Sesame Sauce:
Soy Sauce: 2 tbsp
Mirin: 2 tbsp
Sugar: 1 tbsp
Ginger Paste (from a tube is fine!): 1 tsp
Toasted Sesame Seeds: 1.5 tbsp
For Topping (Optional):
Fresh Parsley, finely chopped: a pinch
Instructions (Just 6 Simple Steps!)
Prep the Chicken & Aromatics: Cut the chicken tenderloin into bite-sized pieces. In a bowl, add the chicken, 1 tsp soy sauce, 1 tsp sake, and a pinch of salt and pepper. Mix well, then lightly coat with potato starch. If using, chop your parsley for garnish.
Cook Noodles & Mix Sauce: Cook the Chinese noodles according to package directions. Once cooked, rinse them under cold water to remove any sliminess and drain thoroughly. In a separate small bowl, combine all the sauce ingredients (2 tbsp soy sauce, mirin, sugar, ginger paste, and toasted sesame seeds). Whisk until the sugar is dissolved.
Cook the Chicken: Heat the vegetable oil in a large frying pan or wok over medium-high heat. Add the prepared chicken and cook until golden brown and cooked through. Remove the chicken from the pan and set aside.
Sauté the Eggplant: To the same pan, add the sesame oil and heat over medium heat. Add the bite-sized eggplant pieces and stir-fry until they are tender and slightly browned.
Combine & Stir-Fry: Reduce the heat to low. Add the cooked and drained noodles and the cooked chicken back into the pan with the eggplant. Pour the prepared sesame sauce over everything.
Finish & Serve: Increase the heat to medium and stir-fry, ensuring everything is well coated with the sauce. Continue to cook until the sauce has thickened slightly and most of the liquid has been absorbed. Transfer to a plate, garnish with fresh parsley if desired, and enjoy your delicious, high-protein meal!
