Hashimaki (Street Style Rolled Okonomiyaki)

Ingredients (for 2 servings)

・3.5 oz (100g) Flour (all-purpose flour/cake flour)
・0.6 cup (150ml) Water
・1 Egg
・1 tsp Dashi powder (Hondashi)

・A handful Shredded cabbage
・1-2 tbsp Canned tuna
・2-3 tbsp Minced green onion
・1-2 tbsp Shredded cheese

・1tbsp Oil

Topping
・Okonomi sauce
・Mayonnaise
・Aonori (dried green seaweed)
・Beni-shoga (Red pickled ginger)

Direction

1. Make a dough by mixing flour, egg, and water.

2. Oil a frying pan, and spread the dough thinly to form a rectangle.

3. Sprinkle your favorite ingredients such as cabbage, green onion, cheese, or tuna. Make your own combination with these ingredients.

4. Pour just a little bit of the dough on the ingredients. Flip it over.

5. Cook the other side for 1-2 minutes. Take it out from the pan.

6. Slightly open the end of the disposable chopsticks and insert them into the dough. Wrap the chopsticks around the dough from the end.

7. Return it to the pan. Add a little bit of dough to the end of the roll of dough. Bake while pressing down on the pan to seal the edges.

8. Place on a plate and top with sauce and toppings (mayonnaise, aonori, and beni-shoga).

Yakisoba (Street Style Japanese Stir-fry Noodles)

Ingredients (for 1 serving)

・5 oz (140g) Noodles
・1.7 oz (50g) Thinly sliced pork
・1.7 oz (50g) Cabbage
・1 tbsp Sesame oil (or Vegetable oil)
・1 tsp Sesame oil (or Vegetable oil)

Sauce
・2 tbsp Worcestershire sauce
・1/2 tsp Chicken stock powder
・1/2 tsp Miso paste
・1/2 tsp Oyster sauce
・1/2 tsp Sugar

Topping
・Aonori (dried green seaweed)
・Beni-shoga (Red pickled ginger)

Direction

1. Cut cabbage into small pieces. Wash noodles in water. (If you need to boil the noodles, boil and then wash it with cold water.)

2. Mix all the ingredients for sauce in a bowl.

3. Oil the pan (1 tbsp oil). Bake the drained noodles in frying pan. Bake over high heat for 4 minutes on one side, pressing down with a spatula to crisp.

4. Flip it over, and bake over high heat for 1 minute on the other side. Remove noodles once.

5. Cook cabbage and pork with a little more oil (1 tsp oil).

6. When pork is cooked, return the noodles to the pan. Turn off the heat, and add sauce mixture.

7. Loosen the noodles and blend the sauce throughout.

8. Once the sauce is distributed throughout, turn up the heat and cook until the water is gone.
