Can a Japanese Beef Meal Prep REALLY Be This Healthy?! (a.k.a. SHIGURENI)
Ingredients (1 serving for 5 days meal prep)
Beef shigure-ni (soy-simmered dish)
・2.2 lb (1kg) Thinly sliced beef
・0.9 cup (225ml / 15 tbsp) Sake☆
・0.6 cup (150ml / 10 tbsp) Soy sauce☆
・2 oz (60g / 6.7 tbsp) Sugar☆
・0.5 oz (15g) Ginger
Broccoli rice
・1.1 lb (500g) Cooked rice
・1.1 lb (500g) Broccoli
・A pinch of Salt and pepper
・Leftover simmering broth from beef shigure-ni
Japanese-style bell pepper pickles
・5.3 oz (150g) Bell peppers
・0.4 cup (100ml) Water★
・1/4 tsp Dashi powder★
・1 tbsp Rice vinegar★
・1 tbsp Soy sauce★
・1/2 tsp Salt★
Direction
- [Pickles] Cut the bell peppers into strips. Put ★ into a storage container, mix well, then add bell peppers and mix well. Allow the flavors to soak in until the other dishes are ready.
- [Beef shigure-ni] Prepare thinly sliced beef. Cut them into bite-sized pieces. Put the beef in the frying pan without heat. Separate the overlapping slices. Add ☆ and mix well with the meat.
- Turn on the heat, and cook over low to medium heat until it comes to a boil. Once it comes to a boil, reduce the heat to low and cook until the beef is completely cooked.
- Remove the beef and let the sauce simmer over low heat for 2 minutes. When the sauce has reduced slightly, add the beef back in and mix quickly. Turn off the heat.
- [Broccoli rice] Chop broccoli very finely and boil or microwave. Sprinkle salt and pepper over broccoli and toss. Add cooked rice and the leftover simmering broth from beef shigure-ni and mix well.
