Japanese BENTO BOX Lunch Ideas #9 – Yakitori Bento etc. Recipes for Beginners

1. Yakitori Bento

Ingredients (for 2 servings)

・Rice (as much as you want)

Chicken yakitori
・4.6 oz (130g) Chicken thigh
・1 tsp Oil

Tsukune
・3.5 oz (100g) Ground chicken
・1.7 oz (50g) Onion
・1 tbsp Potato starch
・A pinch of Salt and pepper

・1.7 oz (50g) Shishito green pepper

Yakitori sauce
・2 tbsp Soy sauce
・2 tbsp Mirin
・1 tbsp Sugar

Flavored ground chicken (Soboro)
・3.5 oz (100g) Ground chicken
・1 tbsp Sake☆
・1 tbsp Soy sauce☆
・1/2 tbsp Mirin☆
・1/2 tbsp Sugar☆
・1 tsp Grated ginger☆

Scrambles egg
・2 Eggs
・1/2 tsp Sugar
・1/2 tsp Oil

Direction

1. [Yakitori]Cut chicken into bite-sized pieces and skewer.

2. [Tsukune]Mince onion. Mix it with ground chicken, potato starch, salt, and pepper. Knead well. Shape into long and thin pieces and skewer.

3. [Shishito]Cut the stem off the shishito green pepper and cut a slit in the middle with a knife.

4. Oil the pan, and cook yakitori, tsukune, and shishito. Initially sear over medium heat. Turn over and cook for 1 minute, then remove the shishito peppers.

Cover and cook over low heat for 3-4 minutes.

Return the shishito peppers. Add yakitori sauce and cook down a little to finish.

5. [Soboro]Stir-fry ground chicken with grated ginger. Add ☆ and cook down a little to finish.

6. [Scrambled egg]Mix egg with sugar. Make hard scrambled egg.

Ingredients (for 2 servings)

Minced pork cutlet sandwich
・3.5 oz (100g) Ground pork + beef
・2.8 oz (80g) Cabbage
・1.7 oz (50g) Onion
・2 tbsp Beaten egg☆
・A pinch of Salt☆
・A pinch of Nutmeg☆
・A pinch of Cumin☆
・Panko
・Oil for frying
・Mayonnaise
・Karashi (Japanese mustard)
・Tonkatsu sauce
・Lettuce

Egg & cheese sandwich
・2 Boiled eggs
・Sliced cheese
・Sliced ham
・Mayonnaise

Butter potato
・10.6 oz (300g) Potato
・2 tsp Oil
・1 tsp Butter
・Mayonnaise
・Spicy cod roe

Direction

1. [Minced pork cutlet sandwich]Cut cabbage into small pieces, and mince onion. Heat cabbage in microwave for 2 minutes at 500W. Let it cool completely.

2. Mix ground meat with cabbage, onion, and ☆ in a mixing bowl. Knead well. Form into a hamburger patty-like shape. Coat it with panko, and fry in oil for 3 minutes of each side.

3. Spread mayonnaise and karashi on bread. Put lettuce and cutlet. Put tonkatsu sauce as you like. Put another slice of bread on top.

4. [Egg & cheese sandwich]Slice boiled eggs. Spread mayonnaise on bread. Put egg, cheese, and ham. Put another slice of bread on top.

5. [Butter potato]Shred potatoes. Fry in oil until soft. Coat it with butter. Put mayonnaise and spicy cod roe as topping.

6. Put all the dishes in the bento box.

3. Japanese Ginger Pork (Shogayaki) & 2 Types Croquettes Bento

Ingredients (for 2 servings)

・Rice (as much as you want)

Japanese ginger pork
・3.5 oz (100g) Thinly sliced pork
・1.7 oz (50g) Onion
・1.5 tbsp Sake☆
・1.5 tbsp Soy sauce☆
・1.5 tbsp Mirin☆
・2 tsp Sugar☆
・1-2 tsp Grated ginger☆

Croquettes
・1.1 lb (500g) Potatoes
・2.5 oz (70g) Ground pork + beef
・1.7 oz (50g) Onion
・1 tsp Butter
・1/2 tbsp Sake★
・1/2 tbsp Sugar★
・1/2 tbsp Miso paste★

・Spicy cod roe

Batter
・2 tbsp Flour
・2 tbsp Beaten egg
・2 tsp Water

・Panko
・Oil for frying

Direction

1. [Japanese ginger pork]Slice pork and onion. Put them in a bowl. Season them with ☆. Let sit for about 20 minutes to soak up the flavors.

After 20 minutes, cook in a frying pan and it’s done.

2. [Croquettes]Thinly slice potatoes, and cook it in microwave for 6 minutes at 500W. When it gets soft, smash with folk. Separate the potatoes in two.
