Japanese Fried Rice Bento etc. – Japanese BENTO BOX Lunch Ideas #16

1. Special Salmon Bento

Ingredients (2 servings)

・Cooked rice (as much as you want)

Salmon
・5.6 oz (160g/2slices) Salmon
・2 tsp Sake
・A pinch of Salt
・2 tsp Ponzu sauce
・1-2 tsp Butter

Chicken and sweet potato stir-fry
・5.6 oz (160g) Chicken
・8 oz (220g) Sweet potatoes
・1 tbsp Olive oil
・A pinch of Salt and pepper☆
・1/2 tbsp Sake☆
・1/2 tbsp Soy sauce☆
・1 tsp Butter★
・1 tsp Honey★
・1/2 tsp Soy sauce★
・Black sesame seeds★

Komatsuna side dish
・8.8 oz (250g) Komatsuna (Japanese mustard spinach)
・1 sheet of Thin fried tofu
・1 tbsp Soy sauce◇
・1 tbsp Mirin◇
・1 tsp Sugar◇
・1/2 tsp Oyster sauce◇

Tamagoyaki
・2 Eggs
・1 tsp Sugar
・2 tbsp Minced green onion
・1 Crab sticks (Imitation crab meat)
・1 tsp Oil

Direction

1.  [Salmon] If the salmon is not salted, sprinkle a little salt on it before cooking. Steam the salmon with a little sake to remove the smell. Cover and cook over low heat for 4 minutes on each side. After cooking, add butter and ponzu to the salmon. Allow the salmon to soak up the sauce well.

2.  [Chicken stir-fry with sweet potato] Cut chicken and sweet potato into small pieces. Slowly fry sweet potatoes in 1 tablespoon of oil. Once the surface is browned, take out the sweet potato.

Cook chicken with the rest of oil. Season it with ☆. Transfer the chicken and sweet potatoes into bigger pot. Season them with ★. Toss it with the sauce well.

3.  [Komatsuna side dish] Cut komatsuna and thin fried tofu into small pieces. Cook komatsuna in a pot until they are almost cooked.  Add fried tofu and season them with ◇. Simmer gently until the liquid is reduced.

2. Shrimp Fried Rice Bento

Ingredients (2 servings)

Fried rice
・14 oz (400g) Cooked rice
・4.2 oz (120g) Shrimp
・A pinch of Salt☆
・2 tsp Sake☆
・1 tsp Grated ginger☆
・1 tsp Grated garlic☆
・2 oz (60g) Lettuce
・2 Eggs
・1.5 tbsp Oil
・Salt and pepper
・2 tsp Chicken stock powder

Potato sticks
・10 Gyoza wrappers
・3.5 oz (100g) Potatoes
・1-2 tbsp Canned corn
・1 Ham slice
・A pinch of Salt and pepper★
・1 tsp Mayonnaise★
・Oil for frying

Direction

1.  [Fried rice] If Season the shrimp with ☆ in advance. Cook the shrimp in a frying pan first. When it’s cooked, take out once. Oil the pan, fry beaten eggs, then add cooked rice. Coat the rice with egg and mix well. Return the shrimp and add lettuce. Season them with salt, pepper, and chicken stock powder. Add more salt and pepper after tasting.

2.  [Potato sticks] Cut potato into small pieces. Cook in microwave until soft, and mash them. Mix it with corn, minced ham, and ★. Wrap this stuffing in gyoza wrappers making like a stick. Fry in oil until golden brown.

3. Kabocha Croquette Bento

Ingredients (2 servings)

・Cooked rice (as much as you want)

Kabocha croquete
・5.3 oz (150g) Kabocha squash
・1.7 oz (50g) Onion
・0.7 oz (20g) Sausage
・1/2 tsp Chicken stock powder☆
・1/2 tsp Soy sauce☆
・1/2 tsp Sugar☆
・1/2 tsp Butter☆
・1/2 tsp Sesame seeds☆
・1 tbsp Flour (+ water to make batter)
・Panko
・Oil for frying

Direction

1.  [Kabocha croquete] ICut kabocha into small pieces. Cook in microwave until soft, and mash them.

Mince onion and sausage. Stir-fry them in a frying pan. Season them with ☆. Mix this stir-fry with mashed kabocha.

Form into a round shape and coat with batter, then panko. Fry in oil for 3 minutes on each side until golden brown.

4. Omu-rice Onigiri Bento

Ingredients (2 servings)

Omu-rice onigiri
・10 oz (300g) Cooked rice
・1.7 oz (50g) Onion
・0.7 oz (20g) Sausage
・1 tbsp Canned corn
・4 tbsp Ketchup☆
・1/2 tsp Sugar☆
・1/2 tsp Consomme or Stock powder☆
・1/2 tsp Soy sauce☆
・1 tsp Butter☆

・2 Eggs
・1/2 tsp Oil

Chicken and pork katsu
・1.4 oz (40g) Chicken
・1.4 oz (40g) Pork (loin or fillet)
・A pinch of Salt and pepper
・1/2 tsp Curry powder
・1 tbsp Flour (+ water to make batter)
・Panko
・Oil for frying

Lotus root stir-fry
・2.8 oz (80g) Lotus root (Renkon)
・1/2 tsp Sesame oil
・1 tsp Sake★
・1 tsp Soy sauce★
・1 tsp Mirin★
・1/2 tsp Sugar★
・A pinch of Dashi powder★
・1 tsp Sesame seeds

Direction

1.  [Omu-rice onigiri] Mince onion and sausage. Stir-fry them and season with ☆. Add canned corn as you like. Mix well. When the water has evaporated and a ketchup paste is formed, it is ready to use. Mix it with cooked rice.

Make beaten eggs and fry in a pan. Form into a thin sheet. Make a ball with ketchup rice and wrap an egg cut lengthwise around it.

2.  [Chicken and pork katsu] Cut your favorite meat into bite-sized pieces. Sprinkle salt, pepper, and curry powder as you like. Coat them with batter, and panko. Fry in oil for 3 minutes on each side until golden brown.

3.  [Lotus root stir-fry] Slice lotus root. Stir-fry with sesame oil, and season them with ★. Add sesame seeds as you like.
