2 Easy Recipes for Japanese-style Rice Bowls with Fall Vegetables

1. Crispy Chicken and Fall Vegetables in a Sweet and Sour Sauce Bowl

Ingredients (2 servings)

・Rice (as much as you want)
・8 oz (230g) Chicken
・2-3 tbsp Potato starch
・1 tsp Grated ginger☆
・1.5 tsp Sake☆
・1 tsp Soy sauce☆
・A pinch of Salt☆
・A pinch of Sugar☆

・4.2 oz (120g) Eggplant
・2.8 oz (80g) Lotus root (renkon)
・2 oz (60g) Kabocha squash
・1.4 oz (40g) Carrot
・1.4 oz (40g) Green bell pepper
・1.4 oz (40g) Onion
・Oil for frying

Sauce
・3 tbsp Water★
・2 tbsp Apple juice★
・2 tbsp Mirin★
・2 tbsp Soy sauce★
・2 tbsp Sugar★
・2 tbsp Rice vinegar★
・1 tbsp Potato starch★

Direction

1.  Cut chicken and vegetables into small pieces. Soak the chicken in ☆. Wait for a while, and coat them with potato starch. Fry all the vegetables in oil until soft. Drain oil well.

2.  Fry the chicken in oil until crisp. Take out once.

3.  Clean the pan, and fry put ★ and bring to a slight boil. Return the vegetables and chicken. Toss with the sauce well. Serve rice in a bowl and top with chicken and veggies.

2. Crispy Sweet Potato Cheese Pork Cutlet Bowl

Ingredients (2 servings)

・Rice (as much as you want)
・7 oz (200g) Thinly sliced pork
・4.6 oz (130g) Sweet potato
・Your favorite cheese
・Salt and pepper
・Batter (2 tbsp Flour + 1.5 tbsp Water + 1 tbsp Beaten egg)
・Panko
・Oil for frying

・Worcestershire sauce

Seasoned eggs
・4 Boiled eggs
・3 tbsp Sake☆
・3 tbsp Soy sauce☆
・3 tbsp Mirin☆
・2 tbsp Water☆
・1 tbsp Sugar☆
・1 tsp Oyster sauce☆
・1 tsp Sesame oil☆
・A pinch of Dashi powder☆

Direction

1.  Slice sweet potatoes and cook in microwave @500W for 3 minutes. Let them cool completely.

2.  Sandwich cheese between two slices of sweet potato. Wrap it with thinly sliced pork.

3.  Dip them in batter, then coat with panko. Fry in oil for 3 minutes on each side.

4.  [Seasoned eggs] Put ★ in a heatproof storage container, warm slightly, and mix well. Add boiled eggs and let them soak up the flavor well.

5.  Serve rice in a bowl and top with cutlet and seasoned eggs.

3. Daigaku-imo (Candied Sweet Potatoes)

Ingredients (1 serving)

・2.8 oz (80g) Sweet potato
・Oil for frying
・1 tbsp Mirin
・1/2 tbsp Sugar
・1/2 tsp Soy sauce
・Black sesame seeds

Direction

1.  Cut sweet potatoes into small pieces. Cook in microwave at 500W for 3 minutes.

2.  Fry in oil until the surface is slightly charred. Drain oil well.

3.  Clean the pan, and warm ☆ in the pan. Add fried sweet potatoes. Toss with the sauce and it’s done.
