LOTUS ROOT miso soup

I have read some Japanese blog telling the story that she got stuck at the security gate when she brought lotus root to an airplane. The security guard had never seen it and even though she explained about lotus root he started check it with metal detector. It’s unbelievable and funny story but yes… I understand the guard couldn’t believe people actually eat this kind of root.

Anyway, lotus root is very good taste and I love the crisp texture of lotus root!
I already used it for CHICKEN MEATBALLS miso soup recipe, but today’s recipe is using lotus root as main ingredients!

【Recipe (2 servings)】

Ingredients
1 oz miso paste (fermented soybean paste)*1
1 teaspoon dashi granules*2
3 oz lotus root, Thinly sliced
2 oz Chinese cabbage, Chopped
0.7 oz (1 sheet) thin fried tofu, Cut into rectangles
1.7 cups (400ml) water

*1 Feel free to adjust the amounts of miso paste to your liking.
*2 If miso paste already contains dashi, don’t need dashi granules.

Directions

1. Heat water and lotus root in a saucepan.

2. Once it boils, add Chinese cabbage and thin fried tofu. Simmer for about 5 minutes to cook them.

3. Add dashi granules and stir well. Then remove from heat.

4. Add miso paste and stir until miso is completely melted.

Ready to eat!

Lotus root is little hard so thinly sliced one is better to be cooked quickly. If the skin of lotus root bothers you, please peel it.

I think lotus root’s taste is actually light itself so juicy thin fried tofu is crucial for the soup. I bet you’ll become addicted to the crisp texture of lotus root!
