This dish combines tender chicken, savory miso garlic sauce, and fluffy rice, all cooked together in a single pot for minimal cleanup. It’s a fantastic way to enjoy authentic Japanese flavors right at home.

Ingredients (Serves 1)

Main Ingredients:

  • Chicken (thigh or breast): 200g (approx. 7 oz), cut into bite-sized pieces

  • Cabbage: 100g (approx. 3.5 oz), cut into bite-sized pieces

  • Vegetable Oil: 1 tsp

  • Salt and Pepper: A pinch (to taste)

Miso Garlic Sauce:

  • Garlic: 1 clove, minced

  • Miso Paste: 2 tbsp

  • Sake (Japanese rice wine): 2 tsp

  • Mirin (Sweet Japanese rice wine): 2 tsp

  • Sugar: 2 tsp

  • Soy Sauce: 1 tsp

For the Rice:

  • Japanese Short-Grain Rice: 75g (approx. 2.6 oz / slightly less than 1/2 US cup)

  • Water: 100ml (approx. 0.4 US cup / or just under 1/2 US cup)

  • Miso Paste: 1 tsp

  • Soy Sauce: 0.5 tsp

  • Sake (Japanese rice wine): 0.5 tbsp

Topping:

  • Green Onion (Scallion): 10g (approx. 0.35 oz), finely chopped


Instructions (Let’s Make It!)

  1. Prep Your Ingredients:

    • Cut the chicken and cabbage into bite-sized pieces.

    • Mince the garlic and finely chop the green onion (for topping).

    • Rinse the rice under cold water until the water runs mostly clear. Drain well and set aside.

    • In a small bowl, combine all the ingredients for the Miso Garlic Sauce (minced garlic, 1 tbsp miso, 1 tsp sake, mirin, sugar, 0.5 tsp soy sauce) and mix well.

  2. Cook the Cabbage:

    • Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the cabbage and sauté until slightly softened. Season with a pinch of salt and pepper.

    • Remove the cabbage from the pot and set it aside.

  3. Cook the Chicken:

    • In the same pot, add the bite-sized chicken pieces and the prepared Miso Garlic Sauce. Cook over medium heat, stirring occasionally, until the sauce thickens and the chicken is fully cooked through.

    • Remove the chicken from the pot. If there’s any remaining sauce in the pot, transfer it to a small bowl to use later. (Optional Pro Tip: For an extra smoky flavor, you can briefly char the cooked chicken with a kitchen torch if you have one!)

  4. Cook the Rice:

    • To the same pot, add the drained rice, 100ml water, 1 tsp miso paste, 1 tsp soy sauce, and 0.5 tbsp sake. Stir everything together well.

    • Cover the pot with a lid and bring to a boil over high heat (this should take about 1-2 minutes).

    • Once boiling, immediately reduce the heat to low and let it simmer for 10-13 minutes, or until all the water is absorbed. You’ll know it’s ready when you can smell a slightly toasty aroma if you carefully sniff near the pot.

    • Turn off the heat and, without removing the lid, let the rice steam for an additional 10 minutes. This makes the rice extra fluffy!

  5. Assemble and Serve:

    • Fluff the cooked rice gently with a rice paddle or spoon.

    • Top the rice with the sautéed cabbage, followed by the Miso Garlic Chicken. Drizzle any reserved Miso Garlic Sauce over the chicken. Finally, sprinkle with the chopped green onions.

    • For the best experience, give everything a good mix in the pot before serving into individual bowls.
