Ingredients (Serves 1)

  • Ramen Noodles (fresh): 110g / 3.88oz

  • Thinly Sliced Pork: 80g / 2.82oz

  • Onion: 40g / 1.41oz

  • Carrot: 30g / 1.06oz

  • Cabbage: 80g / 2.82oz

  • Bean Sprouts: 50g / 1.76oz

  • Oil: 1 tsp (for frying onion)

  • Oil: 1/2 tsp (for frying pork)

For the Vegetable Stir-fry Seasoning:

  • Salt and Pepper: a dash (for pork)

  • Shantung: 1/2 tsp (can substitute with your preferred bouillon or stock)

  • Soy Sauce: 1 tsp

For the Ramen Soup:

  • Water: 350ml / 1.47 cups

  • Soy Sauce: 1.5 tbsp

  • Shantung: 1 tsp (can substitute with your preferred bouillon or stock)

  • Sugar: 1/2 tsp

  • Salt: a pinch

  • MSG: a pinch

For Serving (to add just before serving):

  • Sesame Oil: 1 tsp

  • Sesame Seeds: 1/2 tsp

Instructions

  1. Prepare Your Ingredients: Cut all vegetables and pork into bite-sized pieces.

  2. Stir-fry Vegetables: In a large pan, heat 1 teaspoon of oil and sauté the onion and carrot until softened. Push them to one side, add an additional 1/2 teaspoon of oil, then add the pork. Season the pork with a dash of salt and pepper.

  3. Finish the Stir-fry: Once the pork changes color, add the cabbage and bean sprouts. Season the entire stir-fry with Shantung and soy sauce. Cook until just tender, then remove from the pan and set aside.

  4. Prepare the Ramen Soup: In the same pan (don’t clean it, the leftover juices add flavor!), add all the ramen soup ingredients (water, soy sauce, Shantung, sugar, salt, and MSG). Mix well and bring to a boil. Reheat just before serving.

  5. Cook the Noodles: In a separate pot, bring plenty of water to a rolling boil and cook the ramen noodles according to package directions. Once cooked, drain the noodles and rinse them thoroughly under cold water to remove any starch.

  6. Assemble Your Ramen: In a serving bowl, add the sesame oil and sesame seeds. Pour in the hot ramen soup. Add the rinsed noodles, then top generously with the delicious vegetable stir-fry.
