Last modified date

Today, I’m sharing a recipe for a super easy and delicious sweet potato rice that you can make entirely in your rice cooker. This dish is perfect for a comforting weeknight meal and a great way to enjoy the natural sweetness of Japanese sweet potatoes. Let’s get started!

Ingredients (Serves 1)

  • Uncooked Rice: 150g (5.3 oz)

  • Sweet Potato: 160g (5.6 oz)

  • Carrot: 40g (1.4 oz)

  • Thinly Sliced Pork Loin: 60g (2.1 oz)

★ Seasonings

  • Water: 220ml (0.93 US cup)

  • Soy Sauce: 1 tbsp

  • Sake: 1 tbsp

  • Honey: 1 tsp

  • Oyster Sauce: 1 tsp

  • Shantung: 1 tsp

  • Salt: 1 dash

  • Aji-no-moto (MSG): 1 dash

Instructions

  1. Prepare the Ingredients: Wash the rice by rinsing it with water several times until the water is mostly clear. Drain it completely in a sieve. Dice the sweet potato and soak it in a bowl of water to prevent discoloration. Finely chop the carrot and slice the pork loin into small, thin pieces.

  2. Combine in Rice Cooker: Place the well-drained rice into the rice cooker pot. Add all the ★ Seasoning ingredients and stir everything together well.

  3. Layer the Toppings: Evenly spread the chopped carrots and pork over the rice. Drain the sweet potatoes and arrange them on top of the other ingredients. Do not mix them into the rice at this stage.

  4. Cook: Place the pot in your rice cooker and start the cooking process using your machine’s standard white rice setting.

  5. Serve and Enjoy: Once the rice is cooked, gently fluff and mix everything together. Serve it hot and enjoy the delicious flavors!

A Little Tip: For an extra touch of richness and flavor, try adding a small pat of butter and mixing it in just before serving. It’s delicious!
