This Addictive Japanese Miso Garlic Chicken Rice is My New Rice Cooker Obsession!

Hello everyone! Today, I’m sharing a delicious and super easy recipe using a rice cooker. The combination of savory miso and garlic with chicken is appetizing and perfect for a satisfying meal.

Here are the ingredients and step-by-step instructions. Please enjoy the video and try making it yourself!

Ingredients (Serves 1)

Main:

  • Uncooked Rice: 150g (5.3 oz)

  • Chicken: 130g (4.6 oz)

  • Corn: 60g (2.1 oz) [Drained from a can]

  • Chopped Green Onions: 10g (0.35 oz) [For topping]

Chicken Marinade:

  • Miso: 1 tsp

  • Mirin: 1 tsp

  • Salt: A dash

  • Grated Garlic: 1 tsp

Cooking Liquid (for Rice Cooker):

  • Water: 200ml (0.85 cup)

  • Miso: 2 tsp

  • Soy Sauce: 1 tsp

  • Mirin: 1 tbsp

  • Sake (Cooking Sake): 1 tbsp


Instructions

  1. Wash the Rice
    Wash the rice with water several times until the water becomes relatively clear. Transfer the rice to a sieve and drain the water completely.

  2. Prep the Chicken
    Cut the chicken into bite-sized pieces. Place the chicken in a bowl and rub in the Chicken Marinade ingredients (miso, mirin, salt, and grated garlic) thoroughly.

  3. Combine in Rice Cooker
    Place the drained rice into the rice cooker bowl. Add all the Cooking Liquid ingredients (water, miso, soy sauce, mirin, and sake) and mix well to dissolve the miso.

  4. Add Toppings
    Place the marinated chicken (add the sauce from the bowl as well) and the corn on top of the rice. Spread them out flat so they cook evenly.

  5. Cook
    Turn on the rice cooker using the regular white rice setting.

  6. Serve
    Once cooked, fluff the rice to mix the chicken and corn evenly. Serve in a bowl and sprinkle with chopped green onions. Enjoy!
