This Rice Cooker Hack Makes PERFECT Japanese Fried Rice a.k.a. CHAHAN

Hey everyone! As a Japanese cooking YouTuber, I love sharing simple and delicious Japanese recipes with the world. Today, I’ve got an absolute game-changer for you: Rice Cooker Fried Rice (Chahan)! This recipe is incredibly easy, super fast, and uses your trusty rice cooker to do most of the work. No need for a wok or constant stirring – just set it and forget it!

Ingredients (Serves 1)

  • Uncooked Rice: 150g (5.3 oz)

  • Ham: 4 slices, 40g (1.4 oz)

  • Surimi (Crab Sticks): 40g (1.4 oz)

  • Scallions (Green Onions): 30g (1.1 oz), minced

  • Eggs: 2 large

For the Rice Cooker:

  • Water: 200ml (0.85 cups)

  • ★ Sesame Oil: 1 tbsp

  • ★ Shantung (stock powder): 2 tsp (You can substitute with your favorite bouillon or chicken stock powder)

  • ★ Salt: 1 dash

  • ★ White Pepper: 1 dash

  • ★ MSG (optional): 1 dash


Instructions (5 Simple Steps!)

  1. Prepare the Rice: Rinse the uncooked rice thoroughly until the water runs mostly clear. Drain completely.

  2. Chop Ingredients: Dice the ham and surimi into small pieces. Mince the scallions. Beat the eggs lightly in a bowl and set aside.

  3. Combine & Cook (First Round): In your rice cooker pot, add the drained rice, water, sesame oil, Shantung, salt, white pepper, and MSG. Mix well. Evenly spread the diced ham and surimi on top of the mixture. Close the lid and start your rice cooker on the normal white rice setting.

  4. Add Eggs & Scallions: Once the rice is cooked, open the lid. Pour the beaten eggs over the entire surface of the cooked rice, then sprinkle the minced scallions on top. Gently mix everything together once or twice, close the lid, and press the “Keep Warm” button. Let it rest for 20 minutes.

  5. Serve: Open the lid, give it a good final stir to combine everything perfectly, and your super easy, super quick fried rice is ready to serve!


A Little Note: The “Keep Warm” function after adding the eggs is key! It gently cooks the eggs and steams the scallions, infusing the fried rice with their delicious flavors without overcooking. Enjoy!
