Rice Cooker Pillowy Japanese Rice Bread
Are you looking for a gluten-free bread option that is incredibly easy to make? Today, I’m sharing a revolutionary recipe: Rice Bread made directly from raw rice! There is no kneading required, no butter needed, and you don’t even need an oven. We will be using a standard rice cooker to get that perfect, fluffy texture.
Ingredients (1 Serving)
Raw Rice: 150g (5.29 oz)
Salt: A pinch
Sugar: 15g (0.53 oz)
Oil (Your choice): 10g (0.35 oz)
Warm Water (around 40°C / 104°F): 80ml (0.34 US cup)
Dry Yeast: 4.5g (0.16 oz)
Instructions
Wash and Soak the Rice: Wash the raw rice thoroughly, changing the water several times until it runs clear. Soak the rice in clean water for about 3 hours.
Drain and Blend: Drain the water well and place the soaked rice into a blender. Add the salt, sugar, oil, and warm water.
Blend until Smooth: Blend until the mixture is completely smooth and no rice grains remain.
Add Yeast: Add the dry yeast to the blender and pulse/blend again until well combined.
First Fermentation: Pour the mixture into the rice cooker bowl. Set the rice cooker to “Keep Warm” mode and let it sit for about 25 minutes to ferment.
Check the Rise: Once the batter has doubled in size, it is ready for cooking.
Cook (First Side): Start the cooking process. If you have a “Quick Cook” (Early Cook) mode, use that for 20 minutes. If you only have a “Regular” mode, it may take about 40 minutes.
Flip and Cook (Second Side): Carefully flip the bread over in the bowl. Cook for another 20 minutes (or until the cycle finished).
Finish: If the rice cooker stops automatically during the second round, it is a sign that the moisture has evaporated and the bread is done!
Tips for Success with Your Rice Cooker
Cooking Modes: “Quick Cook” modes usually use higher heat. If your rice cooker only has a “Regular” mode, simply extend the cooking time accordingly (roughly 40 minutes total before flipping).
The Auto-Stop Feature: Don’t worry if your rice cooker shuts off automatically after flipping. This usually means the bread is perfectly cooked and the excess moisture is gone.
Texture: This bread is best enjoyed warm for that signature chewy, mochi-like rice bread texture!
