This Addictive Slow Cooker Japanese Curry Rice is My New Obsession!
Welcome back to my channel! Today, I’m sharing the recipe for my “Ultimate Slow Cooker Japanese Curry.” This is hands down the easiest way to make authentic Japanese curry. The meat becomes so tender it just melts in your mouth!
Here are the ingredients and steps from the video so you can follow along at your own pace.
Ingredients
Yields: 1 Slow Cooker Batch (4 Servings)
Pork Shoulder Loin: 350g (12.3 oz)
Onions: 300g (10.6 oz)
Carrots: 100g (3.5 oz)
Potatoes: 200g (7 oz)
Grated Apple: 150g (5.3 oz)
Water: 350ml (1.5 cups)
Black Coffee: 250ml (1 cup)
Grated Garlic: 2 tsp
Japanese Curry Roux: 4 cubes
Ingredients (1 Serving)
Pork Shoulder Loin: 90g (3.2 oz)
Onions: 75g (2.6 oz)
Carrots: 25g (0.9 oz)
Potatoes: 50g (1.8 oz)
Grated Apple: 40g (1.4 oz)
Water: 90ml (0.38 cups)
Black Coffee: 60ml (0.25 cups)
Grated Garlic: 1/2 tsp
Japanese Curry Roux: 1 cube
Instructions
Prepare the vegetables: Cut the onions, carrots, and potatoes into large chunks. Since we are slow-cooking, larger pieces are better to prevent them from dissolving completely.
Prepare the secret ingredients: Grate the apple and brew the black coffee.
Season the meat: Place the pork shoulder loin into the slow cooker (you don’t need to cut it). Rub the grated garlic all over the surface of the meat.
Combine ingredients: Add the cut vegetables, grated apple, black coffee, and water into the slow cooker.
Cook: Set the slow cooker to cook for 6 to 8 hours.
Add the Curry Roux: About 30 minutes before the cooking time ends (or after the cooking cycle is finished), place the curry roux cubes into the pot. Wait 5 minutes for them to soften, then stir well to dissolve.
Finish: Once the roux has completely dissolved, let it cook for another 20 minutes to thicken.
Serve: Use a ladle to gently break apart the pork (it should fall apart easily). Pour over rice and enjoy!
📝 Chef’s Tips (Hitokuchi Memo)
You might be surprised by the ingredients, but they are the key to the flavor!
Black Coffee: This adds a deep richness and a slight bitterness that balances the curry, giving it a “pro” taste like a hotel restaurant.
Grated Apple: This provides a natural sweetness and enzymes that help tenderize the meat even further.
Enjoy your homemade Japanese Curry!
