The Ultimate Korokke Sando: My BEST Beef & Potato Croquette Sandwich Recipe!
Hey food lovers! Today I’m SO excited to share a recipe that’s a game-changer: The Most Delicious Korokke Sandwich EVER!
If you’ve ever had Japanese korokke (croquettes), you know how comforting and tasty they are. But when you take a perfectly seasoned beef and potato korokke, fry it to golden perfection, and then tuck it into a sandwich with all the right fixings? Pure magic! This isn’t just any korokke sandwich; this is the one you’ll be dreaming about.
I’ve tweaked and perfected this recipe, and I can’t wait for you to try it. Get ready to impress yourself (and anyone lucky enough to share it with you!).

Ingredients (for 1 large Korokke Sandwich)
For the Korokke:
Potato: 75g (approx. 2.65 oz)
Ground Beef: 25g (approx. 0.88 oz, just under 1 oz)
Onion: 20g (approx. 0.7 oz), finely chopped
Vegetable Oil: 1/2 tsp
Salt & Pepper: a pinch
Soy Sauce: 1/2 tsp
Mirin: 1/2 tsp
Sugar: a pinch
Shantan (or chicken/beef bouillon powder): a pinch
MSG (Ajinomoto): a small dash (optional)
Extra Black Pepper: to taste (I love a generous amount!)
Butter: 1/3 tsp (a small pat)
For Breading & Frying:
All-purpose Flour: 1 Tbsp
Water: 1 Tbsp
Panko (Japanese breadcrumbs): 2 Tbsp
Frying Oil: as needed for shallow frying
For the Sandwich:
Bread: 2 slices (thinner slices work well)
Mayonnaise: 1 tsp
Karashi (Japanese mustard): 1/2 tsp (or to taste)
Tonkatsu Sauce: 1 tsp (or to taste)
Lettuce: a few leaves (optional)
A note on quantities: In my YouTube video, I typically make about 4 times this amount. This recipe is perfectly portioned for one amazing sandwich!
Instructions (Let’s Make Some Magic!)
Prep the Potatoes & Meat Filling:
Peel and thinly slice the potatoes into half-moons. Boil in plenty of water until completely soft. Drain thoroughly and mash with a fork until smooth.
While potatoes are boiling, finely chop the onion. Heat 1/2 tsp oil in a frying pan and sauté the onion until lightly browned. Add the ground beef, season with salt and pepper, and stir. Once the beef is mostly cooked, add soy sauce, mirin, sugar, Shantan/bouillon, MSG (if using), and a generous amount of extra black pepper. Cook, stirring, until all moisture has evaporated.
Combine & Shape Korokke:
Add the cooked meat mixture and the small pat of butter to the mashed potatoes. Mix thoroughly until well combined.
Shape the mixture into one large, relatively thin oval patty. Thinner patties cook more evenly and require less oil for frying.
Bread the Korokke:
In a small bowl, whisk together the all-purpose flour and 1 Tbsp water to create a smooth batter.
Dip the korokke patty into the batter, ensuring it’s fully coated.
Immediately transfer the battered patty to a plate with panko, pressing gently so the panko adheres well on all sides.
Fry the Korokke:
Heat a generous amount of frying oil in a pan over medium heat (enough for shallow frying, about 1-2 cm or 1/2 inch deep).
Once the oil is hot (a panko crumb should sizzle immediately), carefully place the breaded korokke into the pan. Fry for about 2-3 minutes per side, or until beautifully golden brown and crispy.
Remove from the pan and let it drain on a wire rack or paper towel.
Assemble Your Masterpiece Sandwich:
Take your two slices of bread. In a small bowl, mix the mayonnaise and karashi mustard. Spread this mixture evenly on the inside of both bread slices.
On one slice of bread, place a few lettuce leaves (if using).
Place the freshly fried, hot korokke on top of the lettuce.
Drizzle generously with Tonkatsu sauce over the korokke.
Top with the other slice of bread.
Serve & Enjoy!
Gently press the sandwich together. For easier eating (and that classic sandwich look!), cut it in half.
