This Rice Cooker Hack Makes PERFECT Japanese Creamy Miso Stew
Hey everyone! Today, we’re making something truly special and incredibly easy: a creamy miso stew, all cooked in your trusty rice cooker! This recipe combines the comforting richness of a Western-style stew with the unique depth of Japanese miso, creating a warm and hearty dish perfect for any day.
The best part? It’s mostly hands-off, thanks to the magic of the rice cooker. Let’s get cooking!
Ingredients (Serves 1)
Chicken Thigh or Breast: 160g (5.6 oz)
Salt & Pepper: A dash of each
Onion: 100g (3.5 oz)
Potato: 100g (3.5 oz)
Carrot: 50g (1.8 oz)
Broccoli: 60g (2.1 oz)
☆ All-Purpose Flour: 2 tbsp
☆ Miso Paste: 2 tbsp
☆ Sake (Cooking Wine): 2 tbsp
☆ Consommé Granules: 1 tsp
☆ Sugar: 1 tsp
☆ Water: 220ml (0.9 cup)
Unsalted Butter: 15g (0.5 oz)
Milk: 200ml (0.8 cup)
Chef’s Tip : For an extra rich and decadent stew, you can substitute half of the milk with heavy cream!
Instructions
Prep Your Ingredients: Cut the chicken and all vegetables into bite-sized pieces. Season both sides of the chicken with salt and pepper.
Mix the Sauce Base: In a separate bowl, whisk together all the “☆” ingredients (flour, miso, sake, consommé, sugar, and water) until the flour is completely dissolved and there are no lumps.
Layer in the Rice Cooker: Place the onion, carrot, potato, chicken, and finally the broccoli into your rice cooker pot in that order. Pour the prepared sauce mixture evenly over everything.
Cook to Perfection: Close the lid and set your rice cooker to its “Normal Rice” cooking mode. Depending on your rice cooker model, it might finish cooking quicker than a full cycle. If it automatically switches to “Keep Warm” prematurely before the vegetables are tender, you can manually stop it and proceed to the next step.
Stir in Dairy: Once cooked, open the lid. Stir everything thoroughly, making sure to gently scrape the bottom of the pot to incorporate any flour that might have settled. Add the butter and milk (or cream) and stir again until well combined.
Final Warm-Up & Serve: Close the lid and press the “Keep Warm” button for about 10 minutes. This allows the flavors to meld and the butter to fully melt. Give it one last good stir, sprinkle with black pepper if you like, and serve warm!
