Hegi soba (へぎそば) is a special type of soba noodle dish that originates from Niigata Prefecture, a region in Japan known for its high-quality rice and sake production. It’s distinct from regular soba in a few key ways:

 

  • Funori Seaweed: The key ingredient that sets hegi soba apart is funori, a type of red seaweed. Funori is kneaded into the soba dough, giving the noodles a uniquely smooth, slippery texture and a slightly springy, chewy bite. This is different from regular soba, which is typically made with just buckwheat flour and water (and sometimes wheat flour as a binder).

  • “Hegi” Presentation: The name “hegi” refers to the rectangular wooden tray or box in which the soba is served. The noodles are carefully arranged in small, bite-sized bundles, making them easy to pick up with chopsticks and share. This presentation is visually appealing and practical.

  • Dipping Style: Like many soba dishes, hegi soba is served cold with a tsuyu dipping sauce. Tsuyu is a flavorful broth made from dashi (Japanese soup stock), soy sauce, and mirin (sweet rice wine). You dip the noodles into the tsuyu before eating. The history is not old.
Hegi soba’s origins trace back to the Uonuma area of Niigata Prefecture. Weaving was a popular industry in this area. Since funori was used as a glue for weaving, people started using funori for soba.
