#2 EASY 20min. BENTO BOX (Japanese Lunch Box) Recipes for Beginners | Cutlet, Rice Balls, & Tempura

1. Ham & Cheese Cutlet Bento

Ingredients (for 1 serving)

・6 oz (170g) Steamed rice

Ham & cheese cutlet
・4 Thin sliced ham
・2 Thin sliced cheese
・1 tsp Grain mustard
・2-3 tbsp Flour
・1-2 tbsp Water
・3-4 tbsp Panko (Bread crumbs)
・Oil for deep-frying

Honey soy kabocha squash
・2 oz (60g) Kabocha squash
・1/2 tsp Honey
・1/2 tsp Soy sauce

Topping
・Pickled plum
・Lettuce leaf
・Boiled egg
・Broccoli

Direction

1. Make boiled egg while making other ingredients for bento box.

2. Spread grain mustard on 1 sliced ham. Place another ham on top of that. Make another set in the same way.

3. Place 2 cheese slices on 1 set of ham & grain mustard. Cut cheese into the shape of ham. Then, place another set of ham & grain mustard on top of cheese.

4. Flour ham & cheese. Pour water in the rest of flour to make quick batter. Soak ham & cheese in batter liquid, and coat with panko.

5. Heat oil for deep-frying. Cook frozen broccoli and kabocha squash in microwave.

6. Deep-fry ham & cheese cutlet for 2.5 minutes on each side.

7. Mash kabocha squash, and season it with honey and soy sauce.

2. Yakisoba (Stir-fried Noodles) Bento

Ingredients (for 1 serving)

Yakisoba
・5.3 oz (150g) Noodles
・1.7 oz (50g) Ground pork or Your favorite meat
・1 oz (30g) Carrot
・1 oz (30g) Green bell pepper
・0.7 oz (20g) Onion
・1 tbsp Oil (optional)
・1.5 tbsp Water
Seasoning for meat
・2 tsp Sake
・A pinch of Salt and pepper
Yakisoba sauce
・1 tsp Sake
・1 tsp Oyster sauce
・1 tsp Soy sauce
・1 tbsp Worcestershire sauce
・A pinch of Salt and pepper

Topping
・Fried egg
・Red pickled ginger
・Aonori (Dried green seaweed)

Direction

1. Cut and slice vegetables, and stir fry them with oil. Add meat, and season it with sake, salt and pepper.

2. Add noodles to pan, and loosen the noodles after pouring water.

3. Add all of seasonings for yakisoba (sake, oyster sauce, soy sauce, Worcestershire sauce, salt, and pepper). Stir to combine.

4. Cook fried egg.

3. Bibimbap-style Bento

Ingredients (for 1 serving)

・6 oz (170g) Steamed rice

Pork stir-fry
・2.5 oz (70g) Thinly sliced pork or Your favorite meat
Seasoning for meat
・1/2 tsp Grated ginger
・1/2 tsp Grated garlic
・1 tsp Sake
・1 tsp Soy sauce
Additional seasoning
・1 tsp Mirin
・1 tsp Soy sauce
・1/2 tsp Sugar
・A pinch of Salt

Spinach
・2.5 oz (70g) Spinach
・1 tsp Soy sauce
・1 tsp Sesame oil
・A pinch of Salt
・1/2 tsp White sesame seeds

Carrot
・1 oz (30g) Carrot
・A pinch of Salt and pepper
・1/2 tsp Sesame oil

Topping
・Boiled egg

Direction

1. Make boiled egg while making other ingredients for bento box.

2. Cut pork into bite-sized. Season it in advance with ginger, garlic, sake, and soy sauce.

3. Bake pork in pan, season with additional seasonings (mirin, soy sauce, sugar, and salt).

4. Slice carrot with peeler. Cook carrot and frozen spinach in microwave. 

5. Season spinach with soy sauce, sesame oil, and a pinch of salt. Sprinkle white sesame seeds. Stir to combine.

6. Season carrot with sesame oil, salt, and pepper. Stir to combine.

4. Spam Rice Ball Bento

Ingredients (for 1 serving)

Spam rice ball
・6 oz (170g) Steamed rice
・2.8 oz (80g) Thinly sliced spam
・1 tsp Sake
・1 tsp Mirin
・1 tsp Soy sauce
・Nori seaweed

Rolled omellete
・2 Eggs
・A pinch of Salt and pepper
・1/2 tsp Oil

Spinach
・1.7 oz (50g) Spinach
・1 tbsp Dried bonito shavings
・1/2 tsp Soy sauce

Direction

1. Crack egg, and make beaten egg after adding salt and pepper.

2. Add oil to heated frying pan. Pour in egg liquid little by little, and make rolled omelette.

3. Bake spam, and remove excess oil with paper towel. Season it with sake, mirin, and soy sauce. Boil down a little.

4. Make 2 rice balls, place baked spam on top of it, and wrap with strips of seaweed.

5. Cook frozen spinach in microwave, put dried bonito shavings, and season it with soy sauce. Stir to combine.

5. 3 Types of Rice Balls & Karaage (Fried Chicken) Bento

Ingredients (for 1 serving)

3 rice balls
・7 oz (200g) Steamed rice
・1/3 tsp Salt
・1/2 tsp Pickled plum
・1/2 tsp Salted kombu
・1/3 tsp Sesame oil
・1 tsp Spicy cod roe

Karaage (Japanese fried chicken)
・2.5 oz (70g) Chicken tender
・1 tsp Grated ginger
・2 tsp Sake
・2 tsp Soy sauce
・2 tsp Flour
・2 tsp Potato starch or Corn starch
・4 tsp Panko (Bread crumbs)
・Oil for deep-frying

Topping
・Broccoli
・Cherry tomato

Direction

1. Remove tendon from chicken tender. Cut chicken into bite-sized, and mix it with grated ginger, sake, and soy sauce. Soak chicken in seasoning mixture for a while.

2. Make 3 rice balls. Wet your hands with water first, and put rice after spreading salt a little on your palm. Make a dent in the middle of each rice balls.

3. Bake spicy cod roe in pan. Mix salted kombu with sesame oil.

4. Place pickled plum, spicy cod roe, and salted kombu on top of each rice balls.

5. Heat oil, and cook frozen broccoli in microwave.

6. Mix flour, potato starch, and panko in clean bowl. Coat chicken with flour mixture.

7. Deep-fry chicken for 3 minutes on each side.

6. Fried Fish & Chikuwa (Fish Paste Stick) Tempura Bento

Ingredients (for 1 serving)

・6 oz (170g) Steamed rice

Fried fish & chikuwa (fish paste stick) tempura
・3.5 oz (100g) Cod
・2.5 oz (70g) Chikuwa (Fish paste stick)
・A pinch of Salt and pepper
・2-3 tbsp Flour
・1 tbsp Water
・2-3 tbsp Panko (Bread crumbs)
・1/2 tsp Aonori (Dried green seaweed)
・Oil for deep-frying

Topping
・Worcestershire sauce
・White sesame seeds
・Cherry tomato

Direction

1. Pat dry cod with paper towel, and sprinkle salt and pepper. Cut chikuwa into half.

2. Sprinkle flour on cod and chickuwa.

3. Pour water in the rest of flour to make quick batter. Soak cod in batter liquid, and coat with panko.

4. Add aonori to batter liquid. Coat chikuwa with aonori batter liquid.

5. Heat oil, and deep-fry cod for 3 minutes on each side. Deep-fry chikuwa tempura for 1-2 minutes on each side.
