1. Sweet Chili Shrimp Bento Box Recipe

Ingredients (for 1 serving)

Sweet chili shrimp onigiri
・Rice (As much as you want)
・Nori seaweed

Sweet chili shrimp (Ebi-chili) 
・3 Shrimps

Shrimp seasoning [A]
・2 tsp Sake
・1/2 tsp Sesame oil
・1/3 tsp Ginger paste
・1/3 tsp Garlic paste
・A pinch of Salt and pepper

Sweet chili sauce [B]
・2 tsp Ketchup
・1/2 tsp Soy sauce
・1/2 tsp Sugar
・1/4 tsp Chicken stock powder

[C]
・1/2 tsp Sesame oil
・1/2 tsp Doubanjiang
・1/3 tsp Ginger paste
・1/3 tsp Garlic paste

[D]
・1/2 tsp Potato starch
・1 tsp Water

Lotus root stir-fry
・2 oz (60g) Lotus root
・1 tsp Sesame oil
・1 tsp Mirin
・1 tsp Soy sauce
・A pinch of Dashi powder (Hondashi)
・White sesame seeds

Egg rolls with okra
・2 Eggs
・2 Okra
・A pinch of Salt
・A pinch of Dashi powder (Hondashi)
・1/2 tsp Sugar
・1/2 tsp Oil

Spinach & corn stir-fry
・2 oz (60g) Spinach
・2 tbsp Corn
・1 tsp Butter
・1/2 tsp Soy sauce
・1/2 tsp Honey

Direction

1. [Sweet chili shrimp musubi] Season the shrimps with [A]. Let sit for 15 minutes.

2. Cook the shrimps with [C]. When it’s cooked, add the sauce [B]. Then, add [D]. When it thickens a little, it is done.

3. Make small rice balls, and put shrimp on top. Roll in thinly sliced nori seaweed.

4. [Lotus root stir-fry] Thinly slice the lotus root. Stir-fry it with sesame oil. Add mirin, soy sauce, and dashi powder. Stir to combine. Sprinkle sesame seeds as you like.

5. [Egg rolls with okra] Put salt on the okra and rub them. Boil them for 1.5 minutes. Remove okra stems. Mix eggs with a little sugar and dashi powder. Make an omelette by adding okra to the omelette and rolling it up along the way.

6. [Spinach and corn stir-fry] Boil the spinach in advance as needed. Stir-fry it with corn and butter. Add honey and soy sauce. Stir to combine.

2. Rice Sandwich (Sushi Sandwich / Onigirazu) Bento Box Recipe

Ingredients (for 1 serving)

・Rice (As much as you want)
・Nori seaweed

Fried shrimp sandwich
・2 Shrimps
・1 tsp Flour
・1 tbsp Beaten egg
・2 tbsp Panko
・Oil for frying

・1 Egg
・A pinch of Sugar
・1/2 tsp Oil

・Lettuce
・Tonkatsu sauce

Ham & egg sandwich
・1 Egg
・2 slices of Ham
・A pinch of Salt and pepper
・1 tsp Mayonnaise

Beef & veggie sandwich
・1 oz (30g) Carrot
・1/2 tsp Sesame oil
・1/4 tsp Garlic paste
・A pinch of Salt
・White sesame seeds

・2 oz (60g) Spinach
・1/2 tsp Sesame oil
・1/2 tsp Soy sauce
・1/4 tsp Garlic paste
・A pinch of Salt

・2 oz (60g) Thinly sliced beef
・1/2 tsp Sesame oil
・1/2 tsp Ginger paste
・1/4 tsp Garlic paste
・1 tbsp Sake
・1 tbsp Soy sauce
・1 tbsp Mirin
・1/2 tbsp Sugar

Direction

1. [Fried shrimp sandwich] Cut a slit in the belly of the shrimp and straighten it. Sprinkle flour, dip it in beaten egg, and coat it with panko. Fry in oil for 3 minutes on each side.

2. Make thin omelette. Spread rice on the center of nori seaweed (nori for sushi rolls). Put lettuce, fried shrimps, and egg. Pour tonkatsu sauce a little. Put thin layer of rice on top. Wrap the whole thing in nori from all sides to form a square.

3. [Ham & egg sandwich] Put a slice of ham into a slightly deeper dish. Crack an egg on it, and sprinkle a pinch of salt and pepper. Pierce the yolk with a fork. Put another slice of ham on top. Cook it in microwave (500W/1.5 minutes). Let cook over residual heat for about 3 minutes.

2. [Lotus root & pork croquette sandwich] Mince lotus root. Put ground pork in a bowl, and season it with salt, sake, sesame oil, and soy sauce. Knead until the meat is slightly white. Mix the meat with minced lotus root, and shape into a croquette.

3. Dip it in batter and coat it with panko. Fry in oil for 3-4 minutes on each side.

4. [Egg sandwich] Mix egg with sugar and dashi powder. Make thick omelette.

5. [Ham & veggie sandwich] Slice cucumber and tomato. Prepare ham slices.
