6 Ways to Make Low Calorie High Protein Japanese Chicken Bowls a.k.a. TORI-DON

1. Fragrant Spiced Chicken Donburi

Ingredients (for 1 serving)

・Cooked rice (as much as you want)+ Shredded cabbage (optional)
・5.3 oz (150g) Chicken thigh
・A pinch of Salt☆
・1 tbsp Yogurt☆
・1/2 tbsp Ketchup☆
・1 tsp Curry powder (S&B)☆
・1/2 tsp Oyster sauce☆
・1/2 tsp Grated garlic☆
・1/2 tsp Grated ginger☆
・1/2 tsp Oil

・2 oz (60g) Broccoli
・Boiled egg

Direction

1.  Skin and cut chicken into bite-sized pieces.

2.  Mix chicken and ☆ in a bowl and mix well. Let rest in the refrigerator for 30 minutes.

3.  Lightly oil a frying pan and cook the chicken. (Grill over medium heat for 2 minutes on one side, then lower heat and grill the other side for 4-5 minutes.)

4.  Microwave broccoli in a pan until cooked through, then lightly toss with chicken sauce left in the pan.

5.  Add rice and shredded cabbage (in the video I am mixing beans with rice) to the bowl and top with chicken, broccoli, and boiled egg as you like.

2. Low Calorie Sauce Katsudon

Ingredients (for 1 serving)

・Cooked rice (as much as you want)+ Shredded cabbage (optional)
・5.3 oz (150g) Chicken breast
・A pinch of Salt and pepper
・1 tbsp Half calorie Mayonnaise
・2 tbsp Panko
・2 tsp Oil

Sauce
・3 tbsp (50ml) Worcestershire sauce☆
・2 tbsp Mirin☆
・1 tbsp Ketchup☆
・1 tbsp Sake☆
・2 tsp Sugar☆

Direction

1.  Thinly slice chicken breast. Sprinkle salt and pepper on both sides.

2.  Coat the surface of the chicken with a light coating of mayonnaise, and sprinkle panko on.

3.  In a clean frying pan, bring ☆ to a light boil to make sauce. Transfer the sauce to a bowl.

4.  Cook the chicken in a pan with a little oil until crispy. Dip the chicken into the sauce as soon as it is done.

5.  Add rice and shredded cabbage to the bowl and top with chicken katsu with sauce.

3. Bang Bang Chicken Donburi

Ingredients (for 1 serving)

・5.3 oz (150g) Raw rice (Japanese short grain rice)
・0.8 cup (200ml) Water
・1 tbsp Sake
・1 tsp Shantung (Any stock powder is fine)

・3.5 oz (130g) Chicken breast strip
・A pinch of Salt and pepper☆
・1/2 tsp Grated garlic☆
・1/2 tsp Grated ginger☆

Sauce
・1.5 tbsp Peanut butter★
・1 tbsp Rice vinegar★
・2 tsp Soy sauce★
・2 tsp Sugar★

Topping
・Salad (Lettuce, tomato, cucumber etc)

Direction

1.  Remove tendon from chicken breast stripes (don’t need to be cut), and season them with ☆.

2.  Wash rice well and drain, put the rice in a pot. Add water, sake, and stock powder. Bring to a boil, then reduce heat to low and simmer until water is evaporated, about 20 minutes.

3.  When the rice is cooked, take out only the chicken and break it into small pieces.

4.  Mix ★ to make sauce. Put rice in a bowl, top with vegetables of your choice, then chicken on top, and finally pour the sauce over the top.

4. Healthy Chicken Meatball Donburi

Ingredients (for 1 serving)

・Cooked rice (as much as you want)+ Shredded cabbage (optional)
・4.6 oz (130g) Ground chicken breast
・4.6 oz (130g) Tofu
・3.5 oz (100g) Lotus root
・1.5 oz (50g) Onion
・5 Shiso leaves
・2 tsp Potato starch
・1/2 tbsp Sesame oil☆
・1/2 tbsp Soy sauce☆
・1 tsp Shantung (Any stock powder is fine)☆
・A pinch of Salt and pepper☆

Sauce
・1 tbsp Water★
・2 tbsp Soy sauce★
・1.5 tbsp Mirin★
・1/2 tbsp Sugar★
・1/2 tsp Potato starch★

Topping
・Red pickled ginger

Direction

1.  Wrap tofu in paper towel, place a weight on top, and drain well. Slice half of the lotus root and chop the other half. Finely chop onion and mix with potato starch.

2.  Put ground meat, tofu, chopped shiso, onion, lotus root, and ☆ in a bowl and mix well.

3.  Make meatballs and boil in boiling water; drain after 4 to 5 minutes of cooking. Boil the sliced lotus root as well.

4.  Put ★ in frying pan and mix well. Make sure the potato starch is completely dissolved, add the meatballs and the lotus root, and turn on the heat. Toss the meatballs and lotus root with the sauce while simmering.

5.  Add rice and shredded cabbage to the bowl and top with meatballs.

5. Tomato Chicken Curry Donburi

Ingredients (for 1 serving)

・Cooked rice (as much as you want)+ Shredded cabbage (optional)
・3.5 oz (100g) Chicken breast
・2.5 oz (70g) Mixed beans
・2.5 oz (70g) Onion
・1 oz (30g) Carrot
・1 tsp Oil
・2 tsp Sake
・A pinch of Salt and pepper

・6.3 oz (180g) Canned tomato☆
・1 tbsp Ketchup☆
・2 tsp Curry powder (S&B)☆
・2 tsp Sugar☆
・1.5 tsp Tonkatsu sauce☆
・1 tsp Consomme (Any stock powder is fine)☆
・1 tsp Miso paste☆

・A pinch of Salt
・A pinch of Black pepper

Topping
・Onsen egg (or Porched egg, Fried egg)

Direction

1.  Chop onion and carrot and fry in a little oil.

2.  When the onions are soft, add the chopped chicken breast and fry with sake, salt and pepper.

3.  When the meat changes color, turn off the heat and add ☆.

4.  Turn on the heat and fry until the water is evaporated. Finally, add the beans and stir. Taste and season with salt and pepper.

5.  Add rice and shredded cabbage to the bowl and top with tomato curry. Top with your favorite style of egg.

6. Low Calorie Oyakodon

Ingredients (for 1 serving)

・Cooked rice (as much as you want)+ Shredded cabbage (optional)
・4.6 oz (130g) Tofu
・4.2 oz (120g) Ground chicken breast
・1.5 oz (50g) Onion
・1 Egg
・3 tbsp Water☆
・1 tbsp Sake☆
・1 tbsp Soy sauce☆
・1 tbsp Mirin☆
・1 tbsp Sugar☆
・A pinch of Dashi powder☆

Direction

1.  Put ☆ in a frying pan and mix well.

2.  Add sliced onion and ground chicken and cook over medium heat. Add tofu along the way and turn over occasionally to allow the sauce to soak into the tofu.

3.  When the onions soften and the liquid in the pan is almost gone, add the beaten eggs.

4.  When the eggs are the desired consistency, they are done.

5.  Add rice and shredded cabbage (in the video I am mixing edamame beans with rice) to the bowl and top with chicken and egg.
