1. Extremely Fluffy Egg Salad Sandwich (Tamago Sando)

Ingredients (for 1 serving)

・3 Eggs
・1 tbsp Milk
・2 tbsp Mayonnaise☆
・A pinch of Salt☆
・A pinch of Sugar☆
・1/2 tsp Japanese mustard (Karashi)☆

・Your favorite bread
・Butter

Direction

1.  Boil three eggs hard. Shell the egg and wrap it in paper towels to absorb as much moisture from the whites as possible. If possible, leave it wrapped for a while.

2.  Separate the whites from the yolks and cut the whites lengthwise into very thin strips.

3.  Place yolks in a separate bowl, add milk and mix well until a creamy paste is formed.

Ingredients (for 1 serving)

・3 Eggs
・3 tbsp Water
・A pinch of Dashi powder
・1 tsp Soy sauce☆
・1 tsp Sugar☆
・A pinch of Salt☆

・1 tsp Oil

・Your favorite bread
・1-2 tsp Mayonnaise
・1/2 tsp Japanese mustard (Karashi)

Direction

1.  Put water and dashi powder in a bowl, and mix well to dissolve dashi powder.

2.  Crack three eggs into the mixture, add ☆ and mix. The trick is to not mix the whites and yolks perfectly.

3.  Oil a well-heated frying pan and pour all the egg mixture into the pan at once.

4.  Mix slowly, using a spatula to move the egg from the outside toward the inside.
