SWEET POTATO miso soup

I have introduced some of my childhood memories on this blog.

The memory of sweet potato is also really clear and I loved baked sweet potato so much.
There used to be mobile shop of sweet potato in the neighborhood, and I was so excited when the truck get closer to my house playing music. They bake the sweet potato over the charcoal, and it actually makes the potato super sweet and nice!

It’s been a while since I cook sweet potato… I can’t cook it over the charcoal at home but Yes! today is the day for SWEET POTATO miso soup!

【Recipe (2 servings)】

Ingredients
1 oz miso paste (fermented soybean paste)*1
1 teaspoon dashi granules*2
4 oz sweet potato, Cut into bite-sized
2 oz onion, Shredded
1 oz cabbage, Cut into bite-sized
1.7 cups (400ml) water

*1 Feel free to adjust the amounts of miso paste to your liking.
*2 If miso paste already contains dashi, don’t need dashi granules. I use miso paste containig dashi this time.

Directions

1. Heat water, onion, and sweet potato in a saucepan until potato is cooked through.

2. Add cabbage and simmer for 1-2 minutes. (Add dashi granules if you need). Then remove from heat.

3. Add miso paste and stir until miso is completely melted.

Ready to eat!

I’ve learned onion can make a soup sweet and mild from past recipe. But sweet potato is far sweeter than onion!!
The soup with sweet potato is amazing and I think it’s almost dessert!
