1. Sano Ramen

Ingredients (1 serving)

・Ramen noodles
・2 tsp Oil

Soup
・1.7 cups (400ml)Water☆
・3 tbsp Sake☆
・1.5 tbsp Soy sauce☆
・1 tsp Chicken stock powder☆
・1/2 tsp Dashi powder (Bonito type)☆
・1/2 tsp Dashi powder (Kombu type)☆
・A pinch of Salt☆

Topping
・Menma (Seasoned bamboo shoots)
・Minced green onion
・Chashu

Direction

1.  In a pot, put ☆ and mix well. Bring to a boil.

2.  Boil ramen noodles, drain, and rinse with cold water.

3.  Put oil in a ramen bowl, and add boiled ramen soup. Mix well, and add ramen noodles.

4.  Top with your favorite ramen toppings such as menma, minced green onion, and chashu.

2. Miyazaki Spicy Ramen

Ingredients (1 serving)

・Ramen noodles
・0.7 oz (20g) Chinese chive
・2 oz (60g) Ground pork
・1 tsp Sake☆
・1 tsp Soy sauce☆
・1 clove of Garlic
・1 Egg
・1 tsp Chili pepper powder

Soup
・1.7 cups (400ml)Water★
・2 tsp Soy sauce★
・2 tsp Chicken stock powder★

Direction

1.  Mince garlic. Mix ground pork with the minced garlic and ☆. Cut Chinese chive into small pieces.

2.  In a pot, add ★ and bring to a boil. Then add ground pork. Mix well and when pork is cooked add Chinese chive.

3.  Bring to a boil again, and add beaten egg. Cook the egg on high heat until fluffy. Turn off the heat. Finally add chili pepper powder to your liking and stir well.

4.  Boil ramen noodles, drain, and rinse with cold water.

5.  Put the soup in a ramen bowl, add ramen noodles. Top with extra chili pepper powder.

3. Sapporo Miso Ramen

Ingredients (1 serving)

・Ramen noodles
・2 oz (60g) Ground pork
・1 tsp Sesame oil
・2 tbsp Minced green onion☆
・1/2 tsp Grated garlic☆
・1/2 tsp Grated ginger☆
・1/2 tsp Doubanjiang☆

Soup
・1.7 cups (400ml)Water★
・1.5 tbsp Miso paste★
・1 tsp Chicken stock powder★
・1 tsp Soy sauce★
・1 tsp Mirin★
・A pinch of Dashi powder★

Topping
・Corn
・Butter

Direction

1.  Oil the pot, and stir-fry ground pork with ☆. When the meat changes color, add ★.

2.  Stir well and dissolve miso paste. Bring to a boil.

3.  Boil ramen noodles, drain, and rinse with cold water.

4.  Put the soup in a ramen bowl, add ramen noodles. Top with corn and butter as you like.

4. Saika Ramen

Ingredients (1 serving)

・Ramen noodles
・2 oz (60g) Pork belly
・2 oz (60g) Chinese cabbage / Napa cabbage
・1 oz (30g) Carrot
・0.7 oz (20g) Chinese chive
・2 tsp Sake☆
・A pinch of Salt and pepper☆
・1 tsp Oil

Soup
・1.7 cups (400ml)Water★
・1.5 tbsp Soy sauce★
・1 tsp Chicken stock powder★
・1 tsp Grated garlic★
・1/2 tsp Doubanjiang★

Topping
・Raayu (Chili oil)

Direction

1.  Cut pork and vegetables into bite-sized pieces. Stir-fry pork with ☆ in a pot. When the pork changes color, add vegetables except Chinese chive.

2.  Stir-fry them until vegetables are slightly soft. Add oil when frying vegetables.

3.  Add ★ to the pot, mix well, and bring to a boil. When Chinese cabbage are soft, add Chinese chive and cook for 30 seconds. 

4.  Boil ramen noodles, drain, and rinse with cold water.

5.  Put the soup in a ramen bowl, add ramen noodles. Pour a little raayu as you like.
