Low Fat Karaage (Healthy Japanese-style Fried Chicken) 

Ingredients (5 servings)

・1.1 lb (500g) Chicken (without skin)

Brine solution for chicken
・4/5 cup (200ml) Water☆
・0.7 oz (20g) Salt☆
・0.7 oz (20g) Sugar☆

Seasoning for karaage
・1 tbsp Sake★
・1 tbsp Soy sauce★
・1 tbsp Grated ginger★
・1/2 tbsp Grated garlic★
・1/2 tsp Sugar★
・1 Egg★

Batter
・1.7 oz (50g) Flour
・1.7 oz (50g) Potato starch

Tomato sauce
・7 oz (200g) Canned tomato
・1.7 oz (50g) Onion
・1 tsp Olive oil
・1 tsp Minced garlic, grated garlic or garlic powder
・A pinch of Salt and pepper◇
・1 tsp Consomme (stock powder)◇
・1 tsp Soy sauce◇
・1 tsp Miso paste◇
・1 tsp Sugar◇
・1 tsp Butter
・1 tsp Honey
・A pinch of Nanami togarashi (Japanese seven spice blend)* ◇
*Use your favorite chili pepper

Nuta sauce with spinach (Miso vinegar sauce)
・1.7 oz (50g) Spinach
・2 tbsp Miso paste◆
・1.5 tbsp Rice vinegar◆
・1.5 tbsp Sugar◆
・1/3 tsp Grated garlic◆

Honey miso sauce with yuzu flavor
・2 tbsp Honey
・2 tbsp Miso paste
・A pinch of Dried yuzu

Miso soup
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・1/2 tsp Dashi powder
・3.5 oz (100g) Daikon
・2 oz (60g) Lotus root (Renkon)
・1 oz (30g) Carrot
・2 Shiitake mushrooms
・2 oz (60g) Deep-fried fish cake (Satsuma-age)
・1 sheet of Thin fried tofu (Abura-age)

Direction

1.  [Karaage] Mix ☆ to make brine solution and marinate chicken for 30 minutes to 1 hour.

Then wipe off the moisture thoroughly with paper towels.

Mix drained chicken and ★ in a bowl and marinate for 20 minutes.

Mix equal amounts of flour and potato starch. Add chicken to the mixture and coat.

Fry in oil for 3 minutes on each side.

2.  [Tomato sauce] Mince onion and stir-fry with oil and garlic. When it becomes soft, add canned tomato and ◇. Boil it down and make it a little thick. Add butter and honey after turning off the heat.

3.  [Nuta sauce] Boil spinach (you don’t need if it’s baby spinach or salad spinach). Cool and squeeze out the water well, then put it in a blender with ◆ to make a paste.

4.  [Honey miso sauce] Mix equal parts miso and honey and add a little dried yuzu.

5.  [Miso soup] Simmer all ingredients with water (add dashi powder together as needed). When hard vegetables are cooked and soft, turn off the heat and dissolve miso paste.
