SIMMERED CHICKEN & DAIKON WITH MISO

I think representative Japanese seasonings such as soy sauce and miso matches so well with sugar (and mirin too).

SIMMERED CHICKEN & DAIKON WITH MISO is easy and absolutely scrumptious recipe that you can taste great miso flavor.
Properly cooked daikon and green onion turn so soft and absorb sweet miso well.

【Recipe (2 servings)】

Ingredients
3.5 oz chicken leg, Cut into bite-sized
3.5 oz green onion, Sliced
5 oz daikon, Quarter sliced
1.5 tablespoons miso paste (fermented soybean paste)*1
1 tablespoon sugar
1 tablespoon sake (or white wine)
1 tablespoon sweet sake (mirin)
1 teaspoon soy sauce
1 teaspoon dashi granules

*1 If miso paste already contains dashi, don’t need dashi granules. I use miso paste containig dashi this time.

Directions

1. Heat daikon in a microwave for 4 min before start cooking (so that daikon easily absorb seasonigs).
Saute chicken leg with oil until the color changes.

2. Turn off the heat once. Add daikon, green onion, and all of seasonings into a pan. Stir well.

3. Simmer on low heat for 15 min. (If you have time, cool down enough so that ingredients can absorb miso sauce well) .
