TOFU & WAKAME miso soup recipe

【Recipe (2 servings)】

Ingredients
1 oz miso paste (fermented soybean paste)*1
1 teaspoon dashi granules*2
5 oz tofu, Diced
1/2 teaspoon dried wakame
1.7 cups (400ml) water
(Prepare extra water to reconstitute dried wakame)

*1Feel free to adjust the amounts of miso paste to your liking.
*2If miso paste already contains dashi, don’t need dashi granules. I use miso paste containig dashi this time.

Directions

1. Combine dried wakame with boiled water and wait until reconstituted. (takes about 1 min)

2. Drain in a sieve and wash with cold water lightly.

Tip: Wakame has unique smell and if you use big amount of it, it would spoil the soup. So I recommend to use a smaller portion of wakame and wash them sufficiently.

3. Heat water and tofu in a saucepan, and after it boils add wakame and dashi granules. Simmer 1 minute and remove from heat.

4. Add miso paste and stir until miso is completely melted.

Ready to eat!

This time I don’t need dashi granules, but if your miso doesn’t contain dashi, I recommend to use dashi granules like this. This is very popular in Japan. It can be used in a variety of dishes.

If you are person who don’t like seaweed, you can just use tofu. It’s still good taste.

Also, since tofu and reconstituted wakame can be eaten without heating, ”TOFU & WAKAME miso soup” can be cooked by only pouring hot water on the bowl with tofu and wakame if you want. That’s perfect meal for busy people I think!
