Japanese Superfood Rice Bowl to Boost Your Immunity

Ingredients (2 servings)

Japanese superfood rice bowl
・Rice (as much as you want)
・Lotus root
・1 tsp Oil
・Cherry tomatoes
・Cucumber
・Natto
・Nori seaweed
・Dried bonito flakes
・Egg yolk (or Porched egg)
・3.5 oz (100g) Chinese yam
・1-2 tsp Pickled plum (Umeboshi)
・1/2 tsp Soy sauce
・1/2 tsp Honey or Beet sugar
・A pinch of Dashi powder

・1 tbsp Soy sauce☆
・1 tbsp Mirin☆
・1 tsp Sesame oil☆
・A pinch of Dashi powder☆

Comforting kabocha and ground meat dish
・8.5 oz (240g) Kabocha squash
・4.6 oz (130g) Ground chicken
・1/2 tsp Oil
・1/2 tsp Grated ginger
・1 tbsp Sake
・0.8 cup (200ml) Water★
・1 tbsp Soy sauce★
・1 tbsp Mirin★
・1/2 tbsp Sugar★
・1 tsp Oyster sauce★
・A pinch of Salt★

・1 tsp Potato starch
・2 tsp Water

Miso soup (1 serving)
・0.8 cup (200ml) Boiling water
・1 tbsp Miso paste◇
・A pinch of Dashi powder◇
・Diced tofu◇
・Dried wakame seaweed◇

Direction

1.  [Rice bowl] Cut the lotus root into very thin slices and fry in a little oil until crispy.

Cut cherry tomatoes and cucumber into small cubes.

Peel yams and cut into small pieces. Season them with a little umeboshi, soy sauce, honey, and dashi powder.

Make the sauce for rice bowl by mixing ☆.

Serve rice in a bowl and top with lotus root chips, tomato, cucumber, yam, nori, bonito flakes, and natto. Finally, place an egg yolk in the center. Eat it while pouring a little sauce on it.

2.  [Kabocha dish] Cut kabocha squash into small pieces. In a frying pan or pot, add a little oil and cook the minced chicken. Add grated ginger and sake. Mix well and cook until the meat changes color.

Cover and simmer over low heat for 10 minutes.

Remove lid and simmer until broth reduces slightly.

Dissolve potato starch in water and add. Increase heat and simmer for 1-2 minutes. When thickened, it is done.

3.  [Miso soup] Put ◇ in a soup bowl. Pour boiling water and dissolve miso well.
